Perfect for St. Patrick’s Day! And I say BEST, because the secret is in the mustard sauce!  One of my Facebook fans said: I chop up leftovers the next day a fry it all in a big skillet with butter. What ingredients do you need for Corned Beef and Cabbage?

Here’s what you need to make the BEST Corned Beef and Cabbage:

  • Corned beef brisket (about 3 pounds) with spice packet
  • Brown sugar
  • Bay leaves
  • Potatoes, carrots, cabbage, and white onion
  • Fresh parsley

Corned beef is sold three ways: The flat, more lean cut with a consistent thickness. The point, or the thicker end of the brisket, with a bit more fat. Or a whole brisket, which includes both the flat and the point.

How to make Mustard Aioli Sauce

What made it delicious is a mustard that we served with it. Using Trader Joe’s Aioli Garlic Mustard Sauce, we made a sweet and spicy mustard to dip the corned beef in. Soooo good! Use these ingredients:

  • Trader Joe’s Aioli Garlic Mustard Sauce
  • Sour cream
  • Sugar

Funny story, we are an Irish family, (my husband’s parents were born and raised in Dublin, their marriage certificate signed by the Pope).

So, I don’t really consider myself an Irish cook … at all. Probably in 28 years of marriage, we’ve served corned beef 4-5 times?

But this week it was fantastic! This recipe, cooked on my stove top.

BEST Corned Beef and Cabbage

Ingredients
 

  • 1 corned beef brisket, about 3 pounds with spice packet
  • 2 Tbsp. brown sugar
  • 2 bay leaves
  • 3-1/2 pounds small potatoes, 10-15, I did not peel
  • 6 large carrots, cut in thirds
  • 1 medium head cabbage, cut into wedges
  • 1 white onion
  • Parsley, chopped

Mustard Sauce

  • 1 cup sour cream
  • 4 Tbsp. Trader Joe’s Aioli Garlic Mustard Sauce, or 2 Tbsp. Dijon mustard
  • 1 tsp. sugar

Instructions
 

  • In a large Dutch oven, place brisket, the seasoning packet, brown sugar and bay leaves, in and cover with water. Bring to a boil. Reduce heat; simmer, covered, for 2 hours.
  • Add potatoes, carrots, and chopped onions; return to a boil. Reduce heat; simmer, covered, just until beef and vegetables are tender, 30-40 minutes. (If pot is full, remove potatoes and carrots before adding cabbage; reheat before serving:)
  • Add cabbage to pot; return to a boil. Reduce heat; simmer, covered, until cabbage is tender, about 15 minutes. Remove vegetables and corned beef; keep warm.
  • Slice and serve with vegetables and Mustard Aioli Sauce. Garnish with fresh chopped parsley!
