Here’s what you need for this summer salad:

  • Burrata cheese balls
  • Strawberries, cherries [grab the cherry pitter], and blackberries
  • Baby tomatoes, cucumber, and endive
  • Fresh mint
  • Olive oil and balsamic vinegar
  • Flake salt
  • Croutons (make my homemade Homemade Italian Crouton Recipe!)

We served this recipe recently at a small dinner. But what I love about the flavors and combination is, it could also be served on tiny plates for an appetizer.

What is burrata cheese used for?

Burrata is delightful served with most produce. Serve it whole, or tear the outside pieces of the mozzarella, and add to your favorite dish (salad, pasta dish, appetizer). It pairs with fruit, such as sliced peaches, berries, and cherries!

I love to decorate my spaces and make an area or place feel new, so when we moved into this house and removed many of the cabinets, it opened up a whole new space for photos.

Back to the summer salad ….

Everything is lovely about this salad. Burrata is amazing, so creamy and satisfying!

The difference between mozzarella and burrata is that mozzarella cheese is a semi-soft Italian cheese made from cow or water buffalo milk. Burrata cheese takes the mozzarella one step further — it’s like mozzarella that’s formed into a pouch, and then filled with soft, stringy curd and cream.

So it’s a puff-ball of soft, delicious cheese!

Add berries and homemade croutons and you have a gorgeous dish to serve!

Burrata Berry Salad

Ingredients
 

  • 3 burrata cheese balls
  • 5-7 strawberries, halved
  • 1 heaping c pitted cherries
  • 1 c baby tomatoes, halved
  • 1/4 English cucumber, sliced into 1/2’’ rounds
  • 1/2 c blackberries
  • 8 fresh mint leaves
  • Flake salt to garnish
  • Olive oil to drizzle
  • Balsamic to drizzle
  • 4 oz whole croutons
  • 2 endives

Instructions
 

  • On a medium platter, arrange the burrata. Surround the cheese with the remaining cherries, strawberries, tomatoes, cucumber, and blackberries.
  • Garnish with the mint leaves, a drizzle of olive oil and balsamic, and a few generous pinches of flake salt. Serve with endives and croutons.
