A Home-y Evening and Bush’s Cannellini Beans and Red Beet Hummus
I love the word “homey”. It just feels so good. Sort of like a fresh loaf of bread coming out of the oven, or a warm fire, a soft blanket in the sunlight or in the backyard under a big tree. I think of food, ambience, the people you love.

Tonight I get to sit out by a fire and talk about life with good friends.
“Like teenagers do.”
That’s what my friend said, when she sent me a quick text.
It was a hospitable invite. A comfy one, at that.
Want to come for dinner? We talk, eat, and drink for hours out by the fire, just like teenagers do.
Don’t we all long for the carefree days, like when we were teenagers? Everything seemed so fresh, simple, fun, exciting …
So I’m bringing a Vegan hummus recipe to munch on tonight with fresh veggies. I’ve made it several times and it’s GOOD.
It’s made with Bush’s Cannellini Beans and red beets! I used a Meyer Lemon and a few other simple, fresh ingredients.
Along with these baby beets from Trader Joe’s that are already cooked. You can buy these in most grocery stores now!
I’m going to ask a question first, not to make you feel bad, but to inspire you to reach out and invite someone over.

Bush's Cannellini Beans and Red Beet Hummus Recipe
Ingredients
- 8 oz. Steamed & Peeled Baby Beets, drained
- 1 15 oz can Bush’s Cannellini beans, or Great Northern Beans, rinsed and drained
- 1 large garlic clove, chopped
- 1/4 cup tahini
- juice of 1/2 lemon
- 1/4 cup olive oil
- 3-4 T. fresh Thyme
Instructions
- Place all the ingredients in a food processor and puree until smooth.
- Best served cold. Flavor gets even better if hummus sits for a few hours.

How long does the hummus keep? Can it be frozen?
A few days (not as long as other hummus because of the beets), and no, Kathy, I would not freeze it.
This is such a genius idea and a great take on the classic hummus!

Homey is a great word. I enjoy homey very much actually. :) I love this hummus Sandy! It’s something I will need to try. I have the best time with friends this way, just munching and drinking by the pool, the fire, in the driveway while kids ride bikes…it’s my favorite. Great recipe!
