If you’ve been following along my 31 Days of Warm Connections series, I’m sharing about friendships and opening our homes today.

A few weeks ago, two of my newer friends came to my house on a Friday morning. In my mind, all week long, I thought about my commitments, list of chores, the last part of the garden that needed harvesting, canning, blogging … you name it, the “list” in my mind became overwhelming and I tried to talk myself out of the invitation I had already made.

The recipe that Fiona brought to my house on this day was so tasty. She’s a gluten-free girl so this is how she made it. Yum!

Recipe: Chocolate Caramel Bars {ReluctantEntertainer.com}

Summary: You won’t be able to stop at just one!

Ingredients

  • Base:
  • 1 cup all purpose flour
  • 1/2 c dessicated coconut OR 1/2 c almond meal
  • 1/2 c brown sugar
  • 1 stick of butter, melted
  • Caramel Filling:
  • 1/3 c golden syrup OR molasses (preferably light flavored)
  • 1 stick of butter
  • 2 cans of sweetened condensed milk
  • Chocolate Topping:
  • 3/4 c dark chocolate chips/melts
  • 2 teaspoons vegetable oil

Instructions

  1. Preheat oven to 350F. Place the flour, coconut or almond meal, brown sugar and butter in a bowl. Mix well. Press the mixture into a 8 x 12 in baking tin lined with non-stick baking paper. Bake for 15 – 18 mins until brown.
  2. For the caramel filling – place the golden syrup or molasses, butter and condensed milk in a saucepan over a low heat and stir for 7 minutes or until the caramel has thickened slightly. Pour over the cooked base and bake for 20 mins or until the caramel is golden.
  3. Refrigerate the bar until cold. Spread with chocolate topping.
  4. Chocolate topping – melt the chocolate together with the oil. (Best to do it in a bowl sitting over a bowl of hot water or 50% power in the microwave.)
