Simplifying our life here in central Oregon–a smaller house and fewer possessions, more outdoor experiences, with quality weekends spent with friends–has been rejuvenating. Truly, it’s caused me to slow down and appreciate all that is happening around me.
When I look back, my husband and I started dreaming of moving 2 years ago. It became an important goal, we kept talking about it, making changes to make it happen, and forging forward. We were never stuck, we were active in checking things off the list, to reach our goal.
Passing on obligations that weren’t a priority in our lives, or that didn’t bring us joy, was part of the process. Sometimes we say yes, only to say yes, before we even consider the consequences of saying yes.
Focusing on what we valued, and getting there, took action and prayer. Paul and I have learned to not forge into things without prayer. And gratitude. There’s something about giving thanks for the day, that grounds us. It brings us back around to what’s important, a heartfelt thanks, and a returning kindness to others in our jobs and daily connections.
I like to think of one big thing and one small thing I can do every day. As a blogger, there’s always someone to help out online, but in real life, right now there are seasons of helping helping my kids, our neighbors, friends, even being a listening ear on the phone to a friend going through a hard time.
Bottom line, I don’t want to zoom through life and miss out. We have an exact amount of hours in a day to get things done, and to work on our goals. Right?
For me, I love sharing recipes and hospitality ideas with my readers. I never want to stop telling people about the blessing of cooking a meal for others, the joy of bringing people together.

Chocolate Peanut Butter Granola Recipe
Ingredients
- 1 c. walnuts
- 2 c. gluten free oats
- 1 c. raw buckwheat
- 1 c. raw sunflower seeds
- 1 c. raw pepitas
- 1/2 c. chia seeds
- 1 1/2 c. shredded coconut
- 1 c. peanut butter
- 1/2 c. cocoa powder
- 1/4 c. maple syrup
- 1 1/2 tsp. vanilla
- 1/4 c. applesauce, unsweetened
- 1/2 c. avocado oil
Instructions
- Preheat oven to 375 degrees.
- In large bowl, combine all nuts and seeds.
- In separate glass bowl, combine peanut butter, cocoa powder, and avocado oil. Mix until smooth. Add maple syrup, apple sauce, and vanilla.
- Combine peanut butter with dry nuts and seeds. Mix with large spoon (or hands work great as well).
- Line baking sheet with foil and spray with oil. Spread granola evenly onto pan (I had to use two pans!)
- Place in oven for 10-12 minutes. Remove, add coconut, and return for 10-12 more minutes.
- Remove from over. Serve warm or cooled with yogurt, milk, or fresh fruit.
- Delicious to give away!
