These Creamy Pesto Goat Cheese Eggs are a delicious dish to serve with fresh tomatoes and basil, perfect for a weekend breakfast or brunch!
Last week my husband and I enjoyed the beauty of Oregon up in Portland for a few days, at the Oregon Berry Festival. We visited Columbia Empire Farms with a Marionberry field tour, and a farm and jam plant tour, ending with a Plate & Pitch Fork farm dinner at Smith Berry Barn. It was a fabulous Gala Berry Tour, and I’ll be sharing more, with a few delicious berry recipes, later this summer.
For now, if you love to cook or enjoy leisurely meals (especially over the weekend), like breakfast or brunch, then you’ll love today’s recipe.
I specifically love the leisurely feel of weekends, that seem to slow us down and help us enjoy life a little more. We’re really trying to discipline ourselves to not work at all on Sundays, to enjoy the day, go to church, meet new friends, experience nature, rest more, and mix it up. Last night 6 of my son’s friends showed up for dinner and to spend the night before heading out for a 3-day hike!
Inspiration, nature, people, and good food.
Good food for us involves a table, bread-breaking, wine (brunch is a good time to enjoy a few sips!), friendships, authenticity, and being at home … wherever home is at that time.
We also went to one of my childhood friend’s home for dinner the other night, sitting around the table until 10:30 at night. One of the things I loved was we discussed … what is home?
I’m not homesick with our move yet, partly because our kids are with us! I think it would be different if they were not here. But home is where your heart is, and my heart is with my family.
We could live anywhere, quite honestly.
So for today, I’m thankful for a different kind of slowing down, enjoying life in a fuller way, and new experiences.

Creamy Pesto Goat Cheese Eggs
Ingredients
- 1/2 c. goat cheese
- 2 tbsp. pesto, I buy DeLallo brand
- 1 large shallot
- 1 tsp. garlic
- 2 tbsp. olive oil
- 8 eggs
- 1/4 c. chopped basil
- 3/4 c. sliced cherry tomatoes
Instructions
- Heat olive oil in a medium frying pan. Add the garlic and shallots, stirring until golden brown.
- In a large bowl, add the pesto and goat cheese. Whip together.
- Turn down the heat on frying pan, and add the eggs to the garlic and shallots. Cook eggs to desired texture.
- Gently stir in the goat cheese mixture, cook for another minute.
- Garnish with cherry tomatoes and basil.
YUM!!!! Sounds soo good. I was going to ask the same question as laurel. I’m going to guess you add it towards the end so the goat cheese melts. I may have to try this for sure.

Just curious. I don’t see in the recipe when you add the goat cheese and pesto mixture. Do you mix in with the eggs, or just add on top when they are cooked? ย
