Friends, over the weekend we were asked to bring a dessert, and I was in a pinch for time. You’ve been there, too?

So today I’m sharing my best entertaining secret for a quick and easy dessert. The presentation is lovely and simple, too.
In my pantry were these little party cups and a jar of Trader Joe’s lemon curd. Perfect.
So about an hour before the dinner, I put together this quick and easy dessert: Easy Lemon Tarts with Strawberries.
Ingredients for Easy Lemon Tarts with Strawberries:

- Lemon curd (I buy Trader Joe’s brand)
- Fresh small trawberries
- Fresh mint
Have you ever kept little pastry cups in the pantry? Use for savory or sweet bites (think tarts and quiche).

How to make savory bites
Savory fillings use smoked salmon & cream cheese, antipasto or bruschetta, chicken salad. Sprinkle with cheese and bake!
How to make sweet bites
Sweet fillings use lemon curd, chocolate mousse, any canned fruit (cherries, blueberries, etc).
I had a bunch of fresh strawberries to use up, so this was the perfect bite. One serving is 3-4 tartlets.
I love a great dessert that keeps people reaching for more!
Well, of course, I’m a lemon curd fan, too!

I also wanted to share a picture that my son sent to me over the weekend for Mother’s Day! When we were in the desert during the month of March this year, we went fly fishing regularly in the lake behind our vacation house. Here, I caught this big mouth bass (yes, it was catch and release).
And my hubby got one, too!
Getting these pictures was a reminder of the fun that we had together as a family!

Easy citrus dessert
You can make your own lemon curd, or simplify by using jarred lemon curd. You can certainly use a variety of berries on top. This Strawberry Lemon Pastry Cups recipe can even be served with just a dollop of whipped cream.
And don’t forget the mint garnish, although fresh thyme would be good, too!
You can make these up 2 hours ahead of time, but anything more, they begin to get soggy.

Easy Lemon Tarts
Ingredients
- Sable & Rosenfeld Party Cups, 1 Pack of 20 Cups
- ½ jar lemon curd, I buy Trader Joe’s brand
- 1-2 cups fresh, small strawberries, halved
- Fresh mint
Instructions
- Place the pastry cups on a large plate.
- Fill each cup with a heaping teaspoon of lemon curd.
- Add a half strawberry to each cup.
- Sprinkle with fresh chopped mint and serve.
