Even into September, we have been eating the best organic strawberries! I love how long the strawberry season goes! These Easy Mini Lemon Tarts are one of the best dessert recipes to make when you are pinched for time.

Lemon desserts rank pretty high on the approved sweets scale, and when they’re topped with fresh berries?? Well, you be the judge, but my family inhaled these tarts, in these little pastry cups. When you are asked to bring a dessert and don’t know what to make? Make these! Of course, I’m a lemon curd fan, and love cobbler and poke cake!

How do you make Easy Mini Lemon Tarts?

  1. Place the pastry cups on a large plate.
  2. Fill each cup with a heaping teaspoon of lemon curd.
  3. Add a half strawberry to each cup.
  4. Sprinkle with fresh chopped mint and serve.

Tips and substitutions:

  • Easy to swap out the strawberries for your favorite berries. Berries go so well with lemon!
  • Sweet fillings use lemon curd, chocolate mousse, any canned fruit (cherries, blueberries, etc).
  • One serving is 3-4 tartlets.
  • Make up no more than 1-2 hours before eating. They can get soggy.
  • Want to make them savory? Savory fillings use smoked salmon & cream cheese, antipasto or bruschetta, chicken salad. Sprinkle with cheese and bake!
  • I love a great dessert that keeps people reaching for more!
