Frittatas are not only one of the tastiest treats to feature at a brunch or breakfast, but they are perfect to serve on a breakfast board. They are easy to make, and you can change up the size (mini muffin pan, regular muffin pan, or large muffin pan). They are the perfect snack, too!

Today, we snagged a few from Trader Joe’s (freezer section), and featuring them on the big board. In fact, we served them on the new Travel Board (yes, a board that folds in half, with a leather handle).

This Egg Frittata Sandwich Board is a very fun spring and summer brunch idea!

All you need are these ingredients:

  • Trader Joe’s Egg Frittatas (in the freezer section)
  • Sliced cheddar cheese
  • Sausage (of your choice)
  • English muffins
  • Strawberries
  • Trader Joe’s Kringle
  • Onion jam (or homemade roasted onions)
  • Blood orange

Serve individual frittatas

Frittatas are not only one of the tastiest treats to feature at a brunch or breakfast, but the ones featured in this recipe are also easy to make and, best of all, snackable.

Using a muffin pan, these frittatas can be made in a number of different ways. You can try this frittata recipe or my Bacon Egg Breakfast Board Muffins.

Put these on the breakfast table on any given Sunday (or holiday) morning and watch them disappear.

How do you make a frittata sandwich?

Serve frittatas immediately or warm. And once cooled to room temperature, they can stand for up to an hour (perfect for a board).

A cooled frittata can be refrigerated up to 1 day. So again, great to make ahead.

Another option is to serve cold, bring to room temperature, or reheat before serving.

Our favorite combination is a piece of cheese, an individual frittata, and onion jam–on an English muffin. Oh, so good!

How do you make a frittata sandwich board?

Prepare the frittatas in the oven or microwave. Slice the English muffins and toast (in the toaster, or broil in the oven).

Prepare the board with a large plate in the center to hold the hot food. Cook the sausage.

Serve the hot food; add the fruit and Kringle and serve!

You can also make a Sausage McMuffin with Egg by adding sausage patties!

Variations and combinations

If you are going to make your own egg cups, try a variation of combinations, like sausage, chives, and broccoli. Or, ham, green pepper, and onion. Make a few with cheese, peppers, and bacon, or more veggies like mushroom and tomato. 

Best of all, this recipe utilizes any leftovers you may have in the refrigerator (like leftover roasted or BBQ veggies).

If you want to make your own “kringle” you can try this Salted Caramel Danish Puff (taste just like Trader Joe’s).

Heart for hospitality

Last week I had a great walk and talk with my friend Marie on a rainy day in Sunriver, and she reminded me of my heart for hospitality.
