Friends, the nights and mornings are getting chillier here in central Oregon. We love it, and we know that we’ll be in for a big surprise with how cold it gets in the winter. But first, let’s talk fall. Because summer has ended, and we wanted to take advantage of the last warm weekend, we savored a tiny bit more of the warm days, and experienced a late-afternoon float.

It was our first float, ever, with our dog, Haggis. Who, by the way, loved it. We didn’t know how he’d do, but he did just fine.
Since I wrote this post last week, we packing up the kayaks to put away for the winter.
It’s hard to say goodbye to fall.
Grain Free Granola Recipe
A snack that we took with us to munch on was Abby’s Grain Free Granola!
Before Abby left for college, she made sure that we were stocked up on this yummy recipe.
She made a double batch, making sure we were well taken care of.
We love a bowl with almond milk.
Or just by itself.
This is a popular recipe for those on a grain-free diet.

Grain Free Granola Recipe
Ingredients
- 3 c. walnuts, chopped
- 2 c. almonds, chopped
- 1/2 c. cashews, chopped
- 1 c. golden raisins
- 1 c. pumpkin seeds
- 1/4 c. chia seeds
- 1/4 c. flax seeds
- 2 tsp. cinnamon
- 3 tbsp. maple syrup
- 2 tsp. vanilla
- 1 c. coconut flakes
- 3 tbsp. coconut oil
Instructions
- Pre-heat oven to 350 degrees.
- Chop walnuts, almonds, and cashews into medium-sized pieces. This can be done with a knife or a food processor; just make sure to not chop them too finely.
- In a large bowl, combine all of the nuts and seeds.
- In a microwave-safe bowl, combine cinnamon, vanilla, maple syrup, and coconut oil. Melt in microwave until coconut oil isliquid. Be careful not to burn.
- Add oil mixture to the nuts and seeds. Mix well, so all dry ingredients are coated.
- Place parchment paper on a large oven-safe pan (9X13 or larger). Spread granola evenly onto the pan.
- Bake for 30-35 minutes, stirring every 10 minutes.
- Enjoy with your favorite berries, or try something new, like fresh plums!
This is the third time I have made this and it’s really good. I needed something my husband would eat when I’m out of town. Thank you so much for all your recipes and your thoughtful blog. I almost always look here first for new ideas.

Love this idea of leaving out the oats. I’ve been buying Bobs Red Mill GF Oats when I make mine. I’ll have to try this version.
We were in SR one December for a 2 week vacation and it snowed the entire time we were there and there was already about 2′ of snow when we arrived. We LOVED it! Went into Bend for their CHristmas parade which was a pretty fun experience too. Have a fun winter!!
Looks fun what is your son using on the water?? recipe looks yummy never thought of making grain free granola. We just had to put away our water craft as well very sad like you we just got some gear this summer and had a blast on it.ย
