Grilled Cheese Flatbread Sandwich

I love a classic grilled cheese on white bread, but sometimes you need to try something new, like this Grilled Cheese Flatbread Sandwich recipe. Sometimes you need to use up what is in your freezer!
Grilled Cheese Flatbread Sandwich
I happened to have some flatbread in the freezer, so with this Roasted Sweet Potato Soup, we thought a flatbread grilled cheese would go great with the spicy, sweet and savory flavors of the soup. Or, maybe try Mom’s Vegetable Beef Soup!
While the outside of the bread toasts like a regular grilled cheese, the flatbread itself has a denser crumb and a delightfully chewier texture. I used a neutral cheese so as to not compete with the flavorful soup we made, but you can add a stronger cheese if you’d like. The addition of harissa, or another chili paste, would also be delightful!
Ingredients for Flatbread Toasted Cheese
- Flatbread (Roti, Naan, Lavash, etc)
- Low moisture mozzarella cheese slices (or a combination of mozzarella and another cheese
- Ghee (we use ghee, but you can also use butter or mayonnaise)
What is low-moisture mozzarella cheese?
It comes in a block form, and is often labeled “low moisture.” Pre-grated cheese comes with an anti-caking agent on the cheese that can alter the texture of the food. So buying it in block form eliminates those elements.
Funny, my mom always bought the block form and grated it herself. We try to do the same now.
What is the best type of bread for grilled cheese?
If you’re not using flatbread, we have found we love these kinds of bread for a grilled cheese sandwich:
- Multigrain
- Sourdough
- English Muffins
- Ciabatta
Can you toast flatbread?
Yes, flatbread is awesome toasted.
You can also toast paninis, ciabatta, bagels, baguettes, tortillas, flatbreads, brioche – you really can toast any kind of bread!

Squish the bread together to push out some of the cheese to crisp on the hot pan.

Grilled Cheese Flatbread Sandwich
Ingredients
- 8 flatbreads, (Roti, Naan, Lavash)
- 12 1 oz low moisture mozzarella cheese slices, or a combination of mozzarella and another cheese
- 4 Tbsp ghee
Instructions
- In a large pan, heat the ghee over medium-low heat. Add the flatbreads to the pan and divide 3 cheese slices onto the two flatbreads. Toast the bread until golden—2-3 minutes. If the cheese isn’t melting, partially cover the pan with a lid. Sandwich the flatbreads together and set aside tented with foil or in a warm oven.
- When ready to serve, halve the sandwiches and serve with soup or by themselves.
