Kayak Charcuterie Board with Gyros
Make a Kayak Charcuterie Board (cheese board) with Gyros to take and assemble kayaking, picnicking, or for your favorite gathering!
Friends, what a day this was, tying our 20-inch Big Board to the kayak, and heading out on the lake for dinner with great friends. Paddling through the lily pads, to the great open Hosmer Lake, on a warm summer night, was pure heaven.

How to make Trader Joe’s Gyros
This is easy, as you just head to Trader Joe’s for these basic ingredients:
- Fully cooked gyro slices
- Trader Joe’s tzatziki sauce
- Pita bread
- Hummus
- Cauliflower tabbouleh (optional)
How to make a gyro
If you want the simplest combination, just buy gyros, tzatziki sauce, and pita bread!
If you want to fancy them up a bit, then also include your favorite hummus flavor (Trader Joe’s has a bunch to pick from), and the cauliflower tabbouleh in the salad section. [Below, me and my pal, RecipeGirl.]
How do you serve gyros in the outdoors? It’s easy!
- At home, heat up the meat and wrap in foil.
- When ready to eat, open a flat bread and spread with the hummus, and then fill with the warm meat (it doesn’t have to be piping hot).
- Optional to spoon some cauliflower tabbouleh over the top.
- Top with tzatziki sauce and serve.

Now for the board…I loved that my husband had the idea to tie it to the back of our canoe, because it was such a fun night eating dinner out on a blanket, near the water! What an experience. [See it tied on the back?]

- Cucumber, bell pepper, snap peas
- Blueberries and cherries
- Hummus
- Trader Joe’s Green Goddess Dip
- Cowgirl My Tam Cheese
- Rogue Creamery Smokey Blue Cheese
- Pepper Jack cheese cubes
- Triscuit crackers
- Flatbread crackers
- Salami slices
- Dried apricots (Trader Joe’s)
- Marcona almonds
- Fresh basil for garnish
- All the fixings for gyros (listed above, and in the recipe)
Rogue Creamery Smokey Blue Cheese
Here’s a fun tidbit on one of my favorite cheeses made in Oregon. Did you know that the Rogue Creamery Smokey Blue Cheese was playfully inspired by Smokey the Bear? It’s an award-winning cheese that is cold-smoked for many hours over Oregon hazelnut shells.
This cheese is one of my favorites to serve, and then to tell the story to our guests!

Kayak Charcuterie Board with Gyros
Ingredients
- 1 cucumber, sliced
- 1 bell pepper, yellow, sliced
- 1 cup snap peas
- 1 cup blueberries
- 1 cup cherries
- 1 cup hummus
- 1 cup Trader Joe’s Green Goddess Dip
- 1 round Cowgirl My Tam Cheese
- 1 package Rogue Creamery Smokey Blue Cheese
- 2 cups Pepper Jack cheese, cubed
- Triscuit crackers
- Flatbread crackers
- 6 oz salami slices
- 4 gyros, buy ingredients at Trader Joe’s
- Dried apricots, Trader Joe’s
- Marcona almonds
- Fresh basil, garnish
All the fixings for Gyros:
- Fully cooked gyro slices
- Trader Joe’s tzatziki sauce
- Pita bread
- Hummus
- Cauliflower tabbouleh, optional
Instructions
- Prepare the board with the above food, leaving room for the gyros.
- To prepare the gyros, at home, heat up the meat and wrap in foil to keep warm.
- When ready to eat, open a flat bread and spread with the hummus, and then fill with the warm meat (it doesn’t have to be piping hot).
- Optional to spoon some cauliflower tabbouleh over the top.
- Top with tzatziki sauce.
- Place the 4 gyros on the board.
- Serve! So simple and delicious!
