My husband is the official griller in the family (thank you, Paul), but occasionally in the summer, we whip up a meal on the stove or in the crockpot. If you’re not a grillmaster like me, you can still join in the outdoor summer fun by making appetizers, side dishes, and scrumptious desserts!
You can also plan a picnic, potluck (a salad potluck is super yummy!), or a casual deck party!
Noodleless Zucchini Chicken Bowl Recipe
We recently made Noodleless Zucchini Bowls for dinner. The perfect weeknight meal for a HOT summer day! A few years ago, when guests started showing up with different diets (vegan, gluten-free, vegetarian), I learned to cook in a different way, by laying out the ingredients and letting guests serve themselves.
We call it stripped down. And bowls are just that. Super easy!
Chop up fresh toppings, use rotisserie chicken or ground turkey, serve a few sides of beans.
I love to make my Crock Pot Salsa Chicken with rice.
And then set out different dressings.
Everyone makes their own bowl! Easy weeknight dinner! Take your bowl outside and throw down a blanket, or sit around the table.
I gotta tell you, I love everything about this summer recipe. It also makes great leftovers, if you’re a leftover family like we are!
And also, relaxing here.
And who doesn’t love zucchini noodles? You can serve them raw or cooked! They’re great leftover in eggs the next morning, or chopped up in a big summer salad. So may options for summer!

Noodleless Zucchini Chicken Bowl Recipe
Ingredients
- Crockpot Salsa Chicken or Rotisserie chicken, shredded
- Brown rice, cooked
- Zucchini, noodles or noodles, raw
- Fresh tomatoes, chopped
- Olives, chopped
- 1 can Bush’s Black Beans, rinsed and drained
- Cilantro, finely chopped
- Lime, for garnishing
- Sour cream for topping
Instructions
- Cook the chicken ahead of time, or buy rotisserie chicken. Shred the chicken.
- Make brown rice according to package directions.
- Zoodle the zucchini, or use a peeler and make noodles. Serve raw (or lightly saute in oil for 2-3 minutes).
- Set out olives, black beans, favorite Mexican cheese, tomatoes, cilantro, and wedges of lime. Set out your favorite salad dressings or Mexican sauce or sour cream!
Ditto on learning how to cook or entertain with various “diets or eating preferences’ but it has gotten me out of my comfort zone and I’ve found I love eating these different ways even when it’s just us at home.
