Summer Peach Caprese Bites Appetizer
This Peach Caprese Bites Appetizer is an easy dish to take on-the-go, or enjoy for a summer evening with your favorite wine.
Friends, summer evenings call for late night dinners, mingling around the table a little longer than normal, and any food dish made with juicy peaches (like these Summer Peach Caprese Bites Appetizer!)
Our family is crazy about peaches! We love to savor white peaches in appetizers or chicken dishes, cobblers and crisps. You may also love my Chilled Carrot Ginger Peach Soup, BEST Peach Tart, or Becky’s Easy Peach Cobbler, or Holly’s Creamy Peach Pie. YUM! This Carmelized Peaches Recipe is also a summer favorite!
Peach Caprese Bites Appetizer
Try these Summer Peach Caprese Salad Bites at your next party and your guests will say … WOW!
This recipe consists of white peaches (but you can also use summer ripe yellow peaches), mozzarella cheese, fresh basil, and blueberries.
Honestly, this caprese version made with peaches epitomizes summer living.
Just ask our neighbors, because I took a plate over to them last night.
And by the way, I have a rule with our neighbors. If you borrow something from me, let’s say a lemon, or a cup of sugar, you never have to return or replace it.
Because I’ll likely be back over knocking on your door, borrowing the same thing, at some time! (You got that, Janice? wink-wink).
Speaking of neighbors, we have some amazing people living in our town, specifically on our little street. We feel very blessed.
Caprese bites
For the bites, buy these little skewers.
Add your favorite fruit, mixed with fresh basil (always), and cheese.
Then you can decide if you want to add a tomato or not. Caprese salads are made with tomatoes, but in this case, I wanted to skip them for a more fruity, sweet flavor.
On a toothpick or skewer, layer the 2 blueberries, a chunk of peach, one mozzarella ball, and fresh basil, ending with a blueberry.
The very best balsamic glaze in the world? The best is Delallo Food’s, so we buy a box of 6 and treat it like gold. But you can also buy it at Trader Joe’s (a tiny bit different in flavor and texture).
I’ve actually given away bottles of this drizzle for hostess gifts! (YUM!)
In the meantime, summer calls for … sharing with your neighbor, enjoying the perfect bite, and of course, being with the people you love.
