How to make a Crudite Platter
Today I’m sharing a delicious Poached Prawn Crudite Platter!
It also reminds me of Abby, because she’s always been our “veggie muncher” in the family. She always has a little bowl of carrots, snap peas, and peppers next to her when she’s working or even cooking.
She also puts together beautiful crudite platters!
What is a crudite platter?
Crudités are raw vegetables that can be cut into small pieces or sticks, or otherwise thinly sliced. They are usually served with some sort of dip. I love serving a fresh platter for company, because not only is it healthy, there’s something for everyone!
Abby recently brought us all to Seattle for her last violin concert. Being her mom, I was nervous and excited for her. But I knew she’d pull it off, and she did.
Her concert was absolutely beautiful, and she shared the stage with her friend, Taylor, who sounded like a Disney princess—her voice was so angelic.
It was very fun to have our family together in Seattle!
Of course we lucked out, with beautiful sunshine. Seattle is stunning when the sun is out!
We ate plenty of food, including clam chowder down at the pier, and watched them throw the fish!
The best family time!
Poached Prawn Crudite Platter
So for Mother’s Day this weekend, I think about my Mom, who’s been gone for almost 22 years, and Ginny, who came into our life shortly after. My Mom always served a good veggie platter, and Ginny does as well!
She’s been a huge blessing to our family, and we’re so grateful for her!
I’ve been lucky to have two influencial women in my life, as well as so many other mentors, role models, and wonderful friends!

How to poach the shrimp
Bring the water, lemon, and bay leaves to a boil, and cook the shrimp according to the directions below.
Immediately drain and place shrimp in an ice bath.
To serve shrimp, fill a bowl with ice and layer on top.
How to serve the shrimp platter
Placing your shrimp in the center, arrange the vegetables around it. Add the spread, and garnish with basil or other greens!
Enjoy nice and fresh and cold for Mother’s Day!

Poached Prawn Crudite Platter
Ingredients
Prawns
- 8 cups water
- 1/2 lemon or 1 lime
- 2 dried bay leaf
- 4 Tbsp Kosher salt
- 1 pound large shrimp, 15 to 20
- Ice cubes and cold water
Platter
- 1 bunch raw carrots, peeled and halved lengthwise
- 1/4 lb fresh green beans
- 1 small bunch, blanched asparagus
- 1 bunch radishes, halved or quartered
- 4 oz goat cheese
- 1/2 lb boiled potatoes
- 3 Belgian endives, halved or quartered
- Basil to garnish
- Other favorite dips and spreads
Instructions
- For Shrimp: Bring water, lemon, and bay leaves to a boil, covered, in a medium pot. Add 4 tablespoons of salt. Reduce to low heat and allow salt to dissolve for 8 minutes.
- Return water to a boil and add shrimp. Cook until bright pink—about 2 minutes.
- Immediately drain, and place shrimp in an ice bath.
- To serve shrimp, fill a bowl with ice, and layer on top.
- Platter: Placing your shrimp in the center, place remaining vegetables and spreads around it. Garnish with basil or other greens and enjoy cold!
