Every so often, you meet someone who inspires your soul, who makes you want to become a better person, a more well-rounded, creative individual. My husband Paul is always pushing me to create something new and fresh, to read more, to give more, to be more.

26 years ago today!

Paul and I have been married 26 years ago today, and how quickly the years have flown by!

When Paul and I met, friendship was the foundation of our relationship. Love came later, of course, as we married and we continue to grow this love into our marriage.

One thing that I instantly loved about Mr. Paul, and couldn’t take my mind off of, was his humor. He began to sneak in jokes into our conversations and, what I realized right away, was that I laughed every time. You know, the kind of jokes that just flow, where he wasn’t trying too hard to impress me.

I was delighted when this fun-loving soul pursued me, and eventually asked me to marry him!

Twenty-six years later, we are still excited about our life together! Marriage is an investment, one of the most important things in the world, where even after all these years, we actively pursue one another. Our marriage has been a journey of joy, sorrow, humor, adventure, sacrifice, FUN, respect, and LOVE.

Make date nights a priority

We hung out with friends in Portland this past weekend. I was expaining to a friend that one of the best things we ever did as a couple was to intentionally plan weekly date nights. I’ve talked about it a lot on my blog, the importance of slowing down, planning, being present with one another.

One rule that we’ve had on our date nights was that we could only talk about the kids the first 5 minutes of our time together. After that, we talked about US. We asked interesting questions, often new questions, and even today, 26 years later, I’m still learning new things about my husband.

Being intentional

Intentionality is something I’m working on more. Taking time to slow down isn’t always easy, but I know it’s in the moments where I am present and mindful that I am able to enjoy the blessings right in front of me.

I’m thankful for every day we’ve had together. Both the ones full of happiness, and the ones where the natural growing pains of life are often felt. I’m thankful that we tried something new, took the risk to move to a new town, and ventured into this new adventure together. We worked hard, and in the process respected and loved each other more through the process.

So Happy Anniversary to US! :) We are truly grateful for every day we’ve been given together, and the blessing of our children!

Ingredients
 

  • 2 cups raspberries
  • 1 cup blueberries
  • 2 Tbsp. crystalized ginger, finely chopped
  • 1 Tbsp. cornstarch
  • 1/3 cup sugar
  • 1 tsp. vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1 tsp. cinnamon
  • 1 cup granola
  • Dash of salt
  • 1 stick butter, cut into small pieces
  • Ice cream or whipping cream

Instructions
 

  • Preheat oven to 350 degrees.
  • In a medium bowl, combine (rinsed) raspberries, ginger, corn starch, sugar, and vanilla. Gently mix and set aside.
  • In a separate bowl combine flour, brown sugar, granola, cinnamon, and a dash of salt, and butter pieces. Cut together with a pastry cutter (or pulse in food processor), until mixture resembles coarse crumbs.
  • Add berry mixture to a small baking dish or pie pan (spray the bottom). Sprinkle topping mixture over berries. Bake for 25 to 30 minutes, or until bubbly.
  • Allow to sit for ten minutes before serving. Serve with whipped cream or vanilla ice cream.
