Friends, I have another recipe from my sweet Abigail, her Rosemary Oven-Baked Sweet Potato Chips. Since she is back to college, and celebrating her 20th birthday this month, it makes me sentimental to think back to all the school mornings, getting the kids ready and sending them out the door!

For this recipe today, I’ve been shopping at one of my favorite stores in Bend, Newport Avenue Market. I like to strike up conversation in the produce area … I just find people interesting, and I like to ask them what they’re making when they pick up something unusual. You can really learn from other shoppers!

I ran into this store to buy some sweet potatoes, because Abby was making her famous (they really should be famous, they are that good), Rosemary Oven-Baked Sweet Potato Chips, to serve with her Sweet Potato Turkey Burgers.

When produce is picked at its peak, it really tastes amazing. Like pulling a sweet potato fresh from the ground (we know, because we are missing our garden beds of sweet potatoes at our old house).
I love sweet potatoes because you don’t have to get fancy with them, to get delicious results.

Rosemary Oven Baked Sweet Potato Chips

I love to roast sweet potatoes, like these that are cut in half, or my Paprika Sweet Potato Chicken Thighs, and I really love a good “smashed” recipe. but this way, baking them, it’s hard to stop eating them.

Make sure that you have a mandolin, or a way to slice the potato really thin!

While baking, make the sweet berry sauce!

And then dip them in the berry jam – perfection! (Remember Columbia Empire Farms sells their Marion Blackberry Jam at Costco, and it’s 1/2 the sugar!)

Rosemary Oven Baked Sweet Potato Chips

Ingredients
 

  • 2 tbsp. ketchup
  • 4 tbsp. Marion Blackberry Jam
  • 1 medium sweet potato, peeled
  • 1 tbsp. Olive oil
  • 1/2 tsp. Dried Rosemary
  • 1 tsp. salt

Instructions
 

  • Pre-heat oven to 450.
  • Combine the ketchup and jam and mix together in a small bowl; set aside.
  • Thinly slice a sweet potatoe using a mandolin (1.5 mm slices).
  • On a baking sheet, lay out a piece of foil. Place a single layer of sweet potato pieces on top.
  • Sprinkle with salt and dried rosemary evenly over the slices.
  • Place in the oven; bake for 10-15 minutes, checking often to make sure the slices do not get too toasty (unless you like them toasty like our family does).
  • Turn off the oven. Leave sweet potatoes in the oven; door open. Remove when you are ready to serve (warm) with Marion Blackberry dipping sauce.
