I’m not a crazy diet girl, but I do know how to get back into a good healthy routine, and on January 1, I started that. I don’t know about you, but over the past few months I’ve gotten into some bad habits of eating anything I wanted, and a laissez-faire approach to exercise.

This week I enjoyed it with my husband for lunch.

I’m also back to daily yoga. (It’s sort of hard to do yoga with a cute Whoodle on your mat!)

I did this in 2016, and it changed my life. I had previously done yoga for years, but this 90 Days with Lesley Fightmaster was amazing (and free). Even when I was in Italy, I did my yoga. Then we moved over to Bend and started in on our fixer upper, and I got out of the habit.

It’s so easy to get out of a good habit, and into a bad one. Sigh …

And the only way to eliminate bad habits is to replace them with good ones. Right?

This salad is super easy if you keep greens and veggies in the fridge, hard cooked eggs ready to go, and pink salmon in the pantry.

We like to buy the 6-pack Wild Alaskan Pink Salmon (boneless and skinless) cans from Costco.

Drizzle with olive oil and balsamic vinegar.

You’ve got a HEALTHY salad for lunch or dinner for the New Year!

Skinny Pink Salmon Green Salad Recipe

Hard cook eggs ahead of time and keep in the fridge.
Prep Time10 mins
Servings: 2

Ingredients

  • 4 cups 7 oz. bag butter lettuce & radicchio
  • 1 6 oz can pink salmon drained, flaked
  • 1 cup cherry tomatoes
  • 1/3 cup grated carrots
  • 2 boiled eggs peeled and cut in half
  • 1/4 cup red onion diced
  • 1/2 avocado sliced
  • Microgreens optional
  • Olive oil
  • Balsamic vinegar

Instructions

  • Arrange in a large bowl all salad ingredients.
  • Drizzle with olive oil and balsamic vinegar; serve!

  1. I love a good salad. We are trying to get into some new and better habits here too. I just looked up the yoga video and they have a 30 day challenge for beginners I might look into since the other looked a little too hard for me…lol
