Slow Cooker Meatball Gnocchi Soup is an easy, delicious, crowd-pleasing dish to serve with hot bread and a side Caesar salad!
Friends, have you ever visited the quaint town of Charleston, on the Oregon coast? My cousin and friend (2 of my besties) and I visited on the most glorious weekend, enjoying the sunshine (although chilly), and beautiful spring weather.
Charleston is an unincorporated community in Coos County, Oregon, United States! Home to a large commercial fishing fleet, it is adjacent to the ocean entrance to Coos Bay. There’s also a United States Coast Guard Station in Charleston.
Besides visiting the beautiful Shore Acres State Park (with funky rocks, cliffs, and flowers), we ate at our favorite Portside restaurant (just think really good seafood and delicious drinks).
We took a drive to Bastendorff Beach, which is between Charleston and Shore Acres, and spent time strolling on the beach for miles and miles.
Do you ever get lost in a stroll? Oregon beaches are great for that, as they have so much character. Another favorite place that our family loves to visit is Pacific City and Moonshine State Park.
Colors and textures, and of course, be prepared for windy days!
Back home to a yummy soup, and a cozy time with my friends.
I’m still dreaming about a meatball gnocchi dish that I enjoyed on this trip, so I decided to recreate it in my slow cooker!
Slow Cooker Meatball Gnocchi Soup
Slow Cooker Meatball Gnocchi Soup is delicious with hot bread, a side salad, and don’t forget the fresh basil and Parmesan cheese.
You can buy all the ingredients for this soup at Trader Joe’s, if you’re a TJ fan (like we are).
Of course, if you’re a cook, you know what mirepoix is, which is easy to buy at TJ as well, but … you can also always quickly chop 1 cup each of onion, celery, and carrot, which will save you some money.
Add all ingredients with the spices. Set the slow cooker on LO, and head out for the day.
Come back to a delicious smell in the house; add the gnocchi and cook for 30 more minutes.

Slow Cooker Meatball Gnocchi Soup
Ingredients
- 2 pounds frozen meatballs
- 14 oz mirepoix, a mix of chopped carrots, celery, and onion, about 1 cup each
- 4 cups chicken stock
- 1 14 oz can diced tomatoes
- 26 oz jar marinara sauce
- 1/2 tsp garlic powder
- 1 Tbsp. dried oregano
- 1 Tbsp. dried basil
- 16 oz mini potato gnocchi, I use DeLallo
- Fresh basil, optional
- 1/4 cup grated Parmesan cheese, plus more for topping
Instructions
- In the slow cooker, add the frozen meatballs, mirepoix, stock, diced tomatoes, marinara sauce, and spices. Cook on Lo for 3-4 hours.
- With a half hour left in the cooking, turn the heat up to high and add the gnocchi and 1/4 cup Parmesan cheese; cook for 30 minutes.
- Serve with grated Parmesan and fresh basil.
Delicious! Definitely a new favorite in my house!

I haven’t ventured down further south on the coast. The furthest we’ve gone is Tillamook. My daughter and hubby go down to Florence often.
