Now, sitting quietly on my kitchen stool, I discover there are a few thoughts that come to mind when it comes to banana bread. Life has moved toward tender and lovely, as our family has changed and the kids have grown.

Nope, no need to refrigerate the Banana Bread, but it’s best if you you can keep it in an airtight container in a cool place. We also wrap the bread in plastic wrap, then a layer of foil, and we freeze the bread.

How to bake banana bread
I love to make this recipe in my favorite ceramic loaf pan. I slice it warm with this serrated knife and add a hunk of butter.
How to bake banana bread to perfection really depends on the size of your pan. You can bake this recipe in 1 loaf (which will take longer) or smaller loaves (which take less time).
Always check the bread in the middle with a toothpick to see if the loaf is done baking, before removing from the oven.
If the batter sticks to the toothpick, bake a little longer.
Sour Cream Banana Bread
Everyone loves it — perfect for a snack, to give away to a friend, neighbor, or teacher, to send in a care package, whip out of the freezer and serve for out-of-town guests at breakfast.

Sour Cream Banana Bread
Ingredients
- ½ cup (1 stick butter) butter, softened
- 1 cup sugar
- 2 eggs, beaten
- 1 ½ cups flour
- 1 tsp. baking soda
- ½ tsp. salt
- 1 cup mashed bananas, about 3
- ½ cup sour cream
- 1 tsp. vanilla
- 1 cup walnuts, chopped (optional)
Instructions
- Preheat oven to 350 degrees. Grease and flour one 9-inch loaf pan (or 3 small ones). Pan should be 3/4 full of batter.
- In a large bowl, cream the butter with sugar until light and fluffy. Add the eggs and mix well.
- Whisk together the flour, baking soda, and salt; combine with the butter mixture.
- Add the sour cream, bananas, and vanilla; stir well.
- Pour into prepared pans and bake for 50-55 minutes.
- Cool for 10 minutes and then turn the loaf out onto a rack.

Excellent! I doubled the recipe and just made two loaves in 2 different ovens to experiment. My ovens cook a little fast so I baked for 40 minutes at 330, toothpick test was still gooey, increased to 340 for final 10 minutes. Perfect! Also added chopped pecans. One loaf to keep (I already sampled and it’s delicious!) and one to share at church tomorrow.

Hi Mandy, I love this recipe and recently dairy free. Im going to try this with vegan butter and Dairy free sour cream. Have you tried it yet? Im going to use earth balance vegan butter and kitehill DF sour cream. I’ll let you know how it turns out.

I made this with a cup-for-cup gluten free flour and it came out amazing! I also subbed the sugar with 1/2 cup dark brown sugar and 1/4 white sugar and it still was plenty sweet. This will be my go-to recipe from now on!
This is the best recipe for banana bread I have tried. Made two small loaves. We ate one rather quickly. Only thing I added was a 1/2 tsp of cinnamon. They were light and moist.

I’ve made this recipe twice now for banana walnut bread. it’s exceptionally moist and delicious. I decided to try it on Persimmons. I made a double batch today with 4 fuyu persimmons, pureed in my Vitamix, which yielded 2 cups. I added walnuts and it came out delicious!

Best banana bread I ever made. I only used 1/4 cup brown sugar and 1/4 white sugar and forgot to add the vanilla. I did add the walnuts. It was delicious!
