Oh friends, are you ready for Memorial Day, summer entertaining, Fourth of July, and hosting out-of-town company here and there? Living in a resort area, this is very common practice for us: summer hospitality!
One of the things I’m good at is throwing together a good summer meal. And an easy dessert, like this Best Strawberry Cobbler Recipe. It’s made with the simplest items–you won’t believe it. And the almond extract? Well, I think this is the “secret” ingredient.
All you need for this recipe are these ingredients for cobbler with berries:
- Fresh strawberries
- Fresh blueberries (or, you can use frozen)
- Lemon
- Butter
- Milk
- Sugar
- Salt + baking powder
- Flour
- Vanilla + almond extract
- Cornstarch
- Fresh mint
- Premium vanilla ice cream or whipped cream
How to Make Strawberry Cobbler
Make this strawberry cobbler in just a few easy steps. You can make a day or two ahead, but it’s best served warm out of the oven.
- Lay the strawberries into a prepared 9 x 13 baking dish, then add the blueberries on top.
- Secret STEP: Squeeze the juice of one lemon over the berries.
- Mix together butter, milk, sugar, salt, baking powder, flour, vanilla, and almond extract. Pour over the berries.
- Make the topping cobbler mixture and spinkle on top.
- Pour boiling water over the entire cobbler and BAKE!

Our first river float this summer
We enjoyed our first kayak float on the river earlier this week. We basked in the sun, and Alder, our 4-year old Whoodle, has finally grown up. No whining, but pure enjoyment. We only saw two other groups floating, so we took it all in … the sounds of the forest and warter, warm sun on our backs, and just being together.
Life is good. And this was his first time to jump from Paul’s boat to mine!
So back to dessert …

Best Strawberry Cobbler Recipe
Ingredients
- 6 cups fresh strawberries, sliced (or more--the more berries, the juicier the cobbler)
- 1 cup fresh blueberries
- 1 lemon juiced
- 6 Tbsp butter melted
- 1 cup milk
- 1 cup sugar
- ½ tsp salt
- 2 tsp baking powder
- 2 cups flour
- 1 tsp vanilla extract
- 1 tsp almond extract
The sprinkled topping:
- ½ cup sugar
- 2 Tbsp cornstarch
- 2 cups boiling water
- Fresh mint, garnish
Instructions
- Preheat oven to 375 degrees.
- Spray a 9x13 pan with cooking spray. On the bottom, lay the strawberries first, then the blueberries on top, and squeeze juice of 1 lemon over the berries.
- In a medium bowl, mix together the melted butter, milk, sugar, salt, baking powder, flour, vanilla, and almond extract. Pour over the berries.
- For topping:
- In the same bowl, add the remaining 1/2 cup of sugar and 2 Tbsp cornstarch. Mix together and sprinkle on top of the cobbler mixture.
- Over the entire cobbler, pour 2 cups of boiling water.
- Bake for 1 hour. Serve warm with vanilla ice cream or fresh whipped cream!
This looks so good, but I think I would prefer mine not quite so liquidy. ย Two cups of water plus all the juice the berries will give off just seems like too much for me (based on looking at the photos). ย Can I pour over just one cup of water, or would that mess things up? ย
Hi Teresa, our recipe calls for 2 cups! We always use 2 cups of boiling water – it makes the cobbler nice and juicy (not dry).
I made this for the first time. Not just the first time for this recipe, but first time for any cobbler! I didnโt understand how it was supposed to work. But I trusted the recipe since I have made many of RE recipes that were delicious before! This cobbler held the reputation for being delicious! I followed the recipe exactly (I didnโt measure my berries as I had several containers of strawberries and blueberries that I knew wouldnโt get eaten! They always look amazing, but then they end up getting forgotten in the fridge and I sadly miss the opportunity!)! This time I was determined to not waste my berries, or money!!ย

Yes, but the cobbler will have more moisture and be quite a bit runnier.
