If by chance you walk past our home around 7 pm tonight, you’ll probably hear a lot of laughter and chatter coming from … somewhere.
Up above in the trees, on our front deck, we’re usually eating together in this small space, tucked in between the aspens and a beautiful white birch. On this night, we enjoyed this Summer Apricot Goat Cheese Appetizer, a summery treat – the perfect bite of seasonal goodness! (Or, these Apricot Ricotta Honey Basil Bites.)
We’ve fully taken advantage of our warm weather by hosting lots of dinner parties. At night, Paul and I fall into bed, exhausted, but happy.

I love this quote by Brene’ Brown (one of my favorite authors): “Connection is the energy that is created between people when they feel seen, heard, and valued; when they can give and receive without judgement.”
She also shares that “belonging” is the innate human desire to be part of something larger than us.
Friends, this is why we love to share our table with others. It’s worth the effort, time, money, and sharing of our family (and also teaching our 20-somethings why hospitality is so important).

Summer Apricot Goat Cheese Appetizer
Ingredients
- 8 apricots
- 7 oz goat cheese
- 1 1/2 tsp honey
- 1 1/2 tsp rosemary
- 1 tsp thyme
- 1/2 cup toasted whole almonds
- Salt to taste
Instructions
- Cut apricots in half and remove pits. Combine cheese, herbs, honey, and salt in bowl. Mix until smooth.
- Roll cheese into balls and place inside apricots. Place one almond in the center. Garnish with fresh herbs.
