Summer Pulled Chicken Pizza on Pita Bread
Is summer flying by or what? This past weekend was great to have our entire family together, the last weekend before school started for our high schoolers. Soon, our oldest son will also be off to college. (My youngest 2 kiddos, freshman and a senior.)
For long summer days, pizza has never been a favorite for me to cook, because I just can’t get into making the crust. I really love fast and easy in the summertime.
This recipe I’m sharing today has changed my thoughts on summertime pizza though.

Recipe: Summer BBQ Chicken Pizza {ReluctantEntertainer.com}
Summary: Easy sweet and savory pizza made with pita bread and fresh ingredients.
Ingredients
- 1 large sweet onion, sliced thinly
- 3 T. olive oil, separated
- 1 rotisserie chicken, pulled off the bone and chopped
- 1 cup barbecue sauce
- 1 cup gouda cheese, grated
- 4 whole pita breads (you can leave whole or cut in half)
- 1/4 cup fresh basil, chopped
Instructions
- In a large skillet, saute onion in 1 T. olive oil for 3-5 minutes, until caramelized.
- Place the chopped chicken in a bowl and mix in the barbecue sauce. Heat or microwave to warm. Salt and pepper to taste.
- Place the pita breads on a baking sheet and brush with oil. Bake at 400 for 5-10 minutes.
- Flip the pitas over and add layer the onions, chicken mixture, grated cheese, and lightly sprinkle with fresh chopped basil.
- Bake at 400 for 15-18 minutes, or until cheese is melted.
Preparation time: 15 minutes
Cooking time: 25 minutes

Great idea for pita crust- I’m going to try this. One of the easiest dishes we make is Black Bean & Chorizo pizza, which is easily adaptable to taste. Just heat one can black beans, soy chorizo, salsa (we use red & green) and a little hot sauce in skillet. Spread on pizza crust (we use Trader Joe’s wheat), drizzle w/ ranch and sprinkle with jalapeno cheese & bake/grill. Voila!

Oh YUM! Yes, we do use pita bread as pizza crust, but I’ve never tried this delicious sounding topping combo! You’ve got me drooling at 9 in the morning :-). One of our favs is just a simple Italian treatment: fresh spinach, thinly sliced tomato, thinly sliced smoked Gouda cheese, a sprinkle of garlic powder, and a drizzle of evoo.- Hope your week is a good one Sandy!

My oldest daughter is a freshman this year too. :) I love, love, love this pizza idea. Never considered using pita bread for the crust. My local grocery store recently started baking rotisserie chickens and I’ve been using them for everything. So much easier! Thanks for another great recipe Sandy!
