Summer Pulled Chicken Pizza on Pita Bread
Is summer flying by or what? This past weekend was great to have our entire family together, the last weekend before school started for our high schoolers. Soon, our oldest son will also be off to college. (My youngest 2 kiddos, freshman and a senior.)
For long summer days, pizza has never been a favorite for me to cook, because I just can’t get into making the crust. I really love fast and easy in the summertime.
This recipe I’m sharing today has changed my thoughts on summertime pizza though.
Have you ever used pita bread for pizza crust? Delicious, quick and easy!
You can bake it in the oven, or you can place the pita breads right on the grill. Aggie from Aggie’s Kitchen will walk you through her process of grilling flatbreads, here.
In the meantime, get creative with your toppings and come back and tell me what you thought about this easy method. :)
What’s your favorite way to make pizza in the summertime?

I love these flavors, and I love that they are made easy by using pita bread!
I haven’t made pizza with pita bread in ages, this looks fantastic Sandy!
Just tried Grilled Pizza last week and it CHANGED my LIFE! haha! Just kidding, but seriously it was THE BEST I’ve ever made at home and way better than any restaurant. I found the tutorial & recipe from http://www.melskitchencafe.com/2011/07/grilled-pizza-how-to.html. She has a whole picture tutorial on how to do it. I used her recipe for fast & easy pizza crust and it turned out wonderful on the first try and I’m no chef! I had some leftover pulled pork so I used sweet bbq sauce, caramelized onions and monterey jack cheese….it was DELISH! Just had to share cuz. Your pics and pita crusts look yummy too!
I love your toppings! I am very much into using pita breads for pizzas and made a lot of them throughout the summer. I especially love them when I am being more careful with my diet because you can have a whole pita pizza and not be cheating….even if you feel like you are! I will definitely try your toppings you have here out. Sounds and LOOKS delicious!
P.S. Found you through Aggie!

Wow – that looks so good and seems pretty easy! Printing out the recipe for something new to try! :)
I love me a little bit of pizza…and what a terrific way to have just that! Your recipe looks deeelish! I can’t wait to try it. Thanks Sandy!!!!!
For summer pizza, we discovered using Indian Naan bread – as a similar idea. They’re sooo inexpensive at a local Indian grocery store, if you happen to have one near by. It costs about $3. for a dozen of them (as opposed to that much for a 2 pack in a regular grocery store). I buy a couple bags & stick them in the freezer. It’s great to have on hand. Also use it to make a quick grilled bread – brushed with a little olive oil & sprinkled with cheese.
Not just for summer time! This makes a great quickie pizza.
We love BBQ chicken pizza, these look tasty!
We are a homemade pizza family! However, we purchase our crusts from Whole Foods. This recipe sounds delicious. Will have to give it try.
While I have used pita bread as crust before, I haven’t used pulled chicken as a topping, this sounds very good. I will be trying this soon on the grill or in the oven made on a baking stone. Thanks for sharing, Sandy!
We are grilling pizza’s tonight on the grill. Yesterday I warmed some naan bread on the grill to serve with our greek chicken! YUMMY!!

Great idea for pita crust- I’m going to try this. One of the easiest dishes we make is Black Bean & Chorizo pizza, which is easily adaptable to taste. Just heat one can black beans, soy chorizo, salsa (we use red & green) and a little hot sauce in skillet. Spread on pizza crust (we use Trader Joe’s wheat), drizzle w/ ranch and sprinkle with jalapeno cheese & bake/grill. Voila!
These look sooooo good!!
I’ve never thought to use pita bread! This sound like a pizza combination I’d love!
I love this! I love that you’re using mountain town olive oil- yeah for Park City companies!! AND, the pizza looks delicious. Short cuts in the summer make me happy!!
Sounds fabulous! And you can also use tortillas as a crust if you’re out of pita bread or something :) Thanks for the topping ideas!
This is right up my alley! Right up my summer pulled chicken pizza on pita bread alley! YUM.
Oh YUM! Yes, we do use pita bread as pizza crust, but I’ve never tried this delicious sounding topping combo! You’ve got me drooling at 9 in the morning :-). One of our favs is just a simple Italian treatment: fresh spinach, thinly sliced tomato, thinly sliced smoked Gouda cheese, a sprinkle of garlic powder, and a drizzle of evoo.- Hope your week is a good one Sandy!
That looks really really good! And easy, which is always nice! You’re kids are gorgeous. Time goes by so fast, doesn’t it?
Have a lovely day my friend.
oh my goodness this looks SO delicious!! What a great pizza! I love using pita for crusts…and of course naan :)
I love love love the pic of your kiddos! :)
My oldest daughter is a freshman this year too. :) I love, love, love this pizza idea. Never considered using pita bread for the crust. My local grocery store recently started baking rotisserie chickens and I’ve been using them for everything. So much easier! Thanks for another great recipe Sandy!
