Summer Pulled Chicken Pizza on Pita Bread
Is summer flying by or what? This past weekend was great to have our entire family together, the last weekend before school started for our high schoolers. Soon, our oldest son will also be off to college. (My youngest 2 kiddos, freshman and a senior.)
For long summer days, pizza has never been a favorite for me to cook, because I just can’t get into making the crust. I really love fast and easy in the summertime.
This recipe I’m sharing today has changed my thoughts on summertime pizza though.

Recipe: Summer BBQ Chicken Pizza {ReluctantEntertainer.com}
Summary: Easy sweet and savory pizza made with pita bread and fresh ingredients.
Ingredients
- 1 large sweet onion, sliced thinly
- 3 T. olive oil, separated
- 1 rotisserie chicken, pulled off the bone and chopped
- 1 cup barbecue sauce
- 1 cup gouda cheese, grated
- 4 whole pita breads (you can leave whole or cut in half)
- 1/4 cup fresh basil, chopped
Instructions
- In a large skillet, saute onion in 1 T. olive oil for 3-5 minutes, until caramelized.
- Place the chopped chicken in a bowl and mix in the barbecue sauce. Heat or microwave to warm. Salt and pepper to taste.
- Place the pita breads on a baking sheet and brush with oil. Bake at 400 for 5-10 minutes.
- Flip the pitas over and add layer the onions, chicken mixture, grated cheese, and lightly sprinkle with fresh chopped basil.
- Bake at 400 for 15-18 minutes, or until cheese is melted.
Preparation time: 15 minutes
Cooking time: 25 minutes
Number of servings (yield): 4

I haven’t made pizza with pita bread in ages, this looks fantastic Sandy!
Just tried Grilled Pizza last week and it CHANGED my LIFE! haha! Just kidding, but seriously it was THE BEST I’ve ever made at home and way better than any restaurant. I found the tutorial & recipe from http://www.melskitchencafe.com/2011/07/grilled-pizza-how-to.html. She has a whole picture tutorial on how to do it. I used her recipe for fast & easy pizza crust and it turned out wonderful on the first try and I’m no chef! I had some leftover pulled pork so I used sweet bbq sauce, caramelized onions and monterey jack cheese….it was DELISH! Just had to share cuz. Your pics and pita crusts look yummy too!
I love your toppings! I am very much into using pita breads for pizzas and made a lot of them throughout the summer. I especially love them when I am being more careful with my diet because you can have a whole pita pizza and not be cheating….even if you feel like you are! I will definitely try your toppings you have here out. Sounds and LOOKS delicious!
