Turkey Pesto Pasta Salad

If you like a saucier dish, add more pesto and mayonnaise to the mixture. Make the day before and let the pesto mingle into the salad.

  • 16 oz. Penne Rigate Pasta, I use DeLallo
  • 2 Honey Crisp apples, cut into chunks
  • 1 small red onion, diced
  • 3 stalks of celery, diced
  • 1 1/2 lb. turkey breast, cubed
  • 1/2 cup prepared pesto sauce
  • 1/4 cup mayonnaise
  • Salt and Pepper
  • 1/2 cup pomegranate seeds

  • Make pasta according to directions. Rinse with cold water; drain and chill.
  • Combine all of the ingredients into the pasta, and toss to coat. Refrigerate until ready to eat. Garnish with pomegranate seeds.
