A pineapple upside-down cake is a delicious “anytime” cake. This recipe is made with a Duncan Hines mix, but you can use a standard yellow or white cake mix. With a topping of butter and brown sugar added first, the batter is spread evenly and the bake to perfection!

Why is it called an “upside down cake?”

The secret to this cake is to flip it over, so the caramelized fruit and topping become the top, hence the “upside-down” cake!

We love this cake served for a special dessert, like if company is coming. It also makes a fun cake for holidays, and is great any time of year. It’s also surprisingly simple to make and you don’t have to bother with frosting or decorating the cake the same way you would a classic layered cake.

  • Fruit: Pineapple slices (from a can, and drained) and maraschino cherries. My mom used to make this cake with sliced peaches (another option).
  • Topping: Brown sugar and butter, which creates a rich caramelized layer. 
  • Cake Batter: Duncan Hines Signature Pineapple Supreme Cake Mix, but you can also use a standard yellow cake mix for the batter. You’ll also need oil, eggs, and water.

It’s a delicious cake – so if you can find it in the store buy it! The boxed cake mixi is made with real pineapple juice and other natural flavors. It is used for many baking recipes like layer cakes, upside-down cakes, or pineapple cupcakes. The mix is for “easy use” by adding water, eggs, and oil to create a smooth batter!

How do you make an Upside Down Pineapple Cake Recipe with Duncan Hines?

This cake has four easy steps! It comes together quickly, and what I love about this cake is you can keep most of the ingredients stocked in your pantry, so you’re always ready to pull a warm, scrumptious cake from the oven for last-minute company!

STEP ONE:

Preheat the oven and spray a 9×13-inch pan with baking spray. Pour melted butter in the pan and add the brown sugar. Arrange the drained pineapple slices on top of the brown sugar, placing a cherry in the center of the pineapple slice.

STEP TWO:

In a large bowl, beat the cake mix with water, oil, eggs, and vanilla extract using an electric mixer on low speed until mixed; turning the speed up and mixing for 2 minutes. Pour the batter over the pineapple and place in the oven. Bake the cake and use the toothpick method to make sure the cake is done. [Poke a toothpick in the center of the cake and if it comes out clean, the cake is done!]

STEP THREE:

Remove the cake from the oven and cool it on a wire rack for 5 minutes. Next, invert the cake onto a serving platter. Drizzle any remaining pan juices over cake, using a spatula to get them all.

Cut the cake into squares (usually that include a whole slice of pineapple, but it doesn’t have to be cut this way), and serve with whipped topping. Serve the cake warm or cool.

We love this dessert served with Marry Me Chicken Meatballs, a big green salad, and herby bread! This is the ‘icing on the cake’ for a wonderful dessert!

  • Cake mix: If you can’t find the Duncan Hines cake mix, you can use a regular yellow or white mix.
  • Pineapple is optional, but it’s the best. You can also use peach slices.
  • Cherries are optional!
  • Serving: Use a beautiful platter if you are serving this for a special occasion.
  • Storage: Store any leftovers in tightly sealed container in the fridge for up to 5 days. If left on the counter, for up to 3 days. This cake is also freezeable after it is baked and cooled.

  • Bake 30 to 35 minutes or until toothpick inserted in center comes out clean.
  • Cool cake on wire rack for 5 minutes. Next, invert the cake onto a serving platter. Drizzle any remaining pan juices over cake, using a spatula.
  • Cut into squares and serve whipped topping. Serve the cake warm or cool.
