What is it about the outdoors that makes breakfast taste so good?
And sleep … it feels so good when you breath the crisp air.
Before the cold weather hit southern Oregon (we’ve had a beautiful autumn here in Oregon!) my girlfriends and I snuck away to their cabin with our daughters.
Sneaking away: intentional planning, living freely, no clock, putting the normal schedule aside, learning to rest and enjoy.
To have rest we must make it a priority. It means we stop, and sometimes that takes effort (especially for busy women).
After an easy breakfast of Cinnamon Chip French Toast (my daughter’s all-time favorite) we cleaned up, packed up, and headed home. A 24-hour getaway. A special time with friends.
Knowing it takes effort to make a getaway happen, do you feel it’s worth it when you’re back home and reflecting on your time away?
Recipe: Cinnamon Chip French Toast {ReluctantEntertainer.com}
Summary: Whatever the season, this is a breakfast that everyone enjoys. I end up doubling and tripling the recipe for large groups.
Ingredients
- 1 loaf of cinnamon chip bread (I buy mine at Great Harvest)
- 4 eggs
- 2 cups milk or 1/2 and 1/2
- 1 T. cinnamon
- 2 tsp. vanilla
Instructions
- Whisk together eggs, milk, cinnamon, and vanilla in a bowl.
- Heat skillet over medium heat. Add butter or spray with Pam.
- Quickly dip slices of bread in batter until they are just coated.
- Cook on both sides until golden brown. Serve with maple syrup, powdered sugar, Nutella, or homemade jam.

I’ve never heard of Cinnamon Chip bread or Great Harvest. I live in Southern CA. Too bad–it sounds good. I thought this was going to be a recipe that added in the cinnamon and chips.

I love french toast, and it’s been so long since I’ve had it. This will be something I’ll be making for my Sunday morning breakfast real soon. Thanks for the reminder.

I always feel the effort made for a getaway is rewarding. and time well spent. I just recently flew to England where my daughter lives to meet my brand new grandson. (First and only grandson!)
