Texas Caviar Bean Dip for Cinco de Mayo Day

Are you entertaining a crowd for Cinco de Mayo this weekend? Or have you been invited out?

For us, the latter. We’re happy to be biting into our friends delicious cooking, but we’re also contributing to the meal. I’ll be taking one of our family-favorite recipes that can used as a salad, or as a dip!

You hear, The Secret is in the Sauce, which is true for this recipe. It involves some prepping, and a tiny bit of cooking, but overall the time involved is well worth it.

Margaritas, bowls of guacamole and chips, tacos and the gathering of good friends are all signs of a successful Cinco de Mayo fiesta.

What’s your favorite Mexican dish to take to a party?

This recipe is included in my book, The Reluctant Entertainer, a great gift idea for Mother’s Day which is right around the corner! If you want a signed copy, go here. If you want to buy on Amazon, go here. The winner to the KitchenAid Stand Mixer giveaway is: Richella.

Cinco de Mayo isn’t a big deal here in Canada. But I like to honour it anyways – we’ll be digging in to guacamole and fish tacos. Yum.

I bet I’ve like this “caviar” better than the real stuff! :)

Love this stuff! Now I’m definitely making it this weekend–I think I’ll add it to a chicken enchilada recipe I saw in Country Living. Getting hungry just thinking about it!

Yum, yum, yum!! I love Cinco de Mayo! I’ve seen this recipe mentioned different places, but I’ve never had the actual recipe–thank you for sharing it. Aren’t Bush’s beans just the best? Readily available almost anywhere and always good quality. I love high-quality canned goods. It makes me happy to see them stacked in my pantry. :)

Thank you so very, very much for the KitchenAid giveaway. I am pinching myself–I can’t BELIEVE I won! When I entered, I thought, “Well, someone has to win, right?” But I really didn’t think it would be me. I’m so happy!!

My husband makes a variation of this and everybody loves it! Sometimes, he will roast corn on cob out on the grill and use that instead of canned corn – gives it a wonderful flavor. Now you’ve gone and made me hungry for some! Since we are going to friends’ house on Saturday evening, maybe we need to get in there and whip up a batch of this to take with us!

I love this stuff! I’ve made it a ton of times before but never cooked the sauce. I’ll have to try cooking it this weekend and see if it tastes different. Thanks for the inspiration to throw an impromptu party. I have some cute festive lights and a darling sombero chip and dip I should bring out. Don’t you just love a good guacamole?! Happy Cinco de Mayo! :)

This looks so good, thanks for adding it to my post yesterday! I’ve had Texas caviar only a few times, but I love it! Can’t wait to try your version.

This seems like it makes a lot! Can you freeze it?

Tara, I’ve never tried freezing it. If you do, come back and tell me if it worked for you :)
