Bush’s Beans Easy Chicken Chili & Last-Minute Entertaining

We love the holidays in our home! But we also try to not over-book ourselves. We need relaxation – it’s fun to hang as a family!

Last week we came home to unexpected guests. It was fine. I had a Costco chicken in the fridge and I always have Bush’s Beans in the pantry.

So I whipped up a pot of chili, inspired from Bush’s Chicken Chili Bean Chowder recipe.

Chicken Chili is a stand-by –a family favorite–and a crowd-pleasing recipe. It’s a perfect food that satisfies our winter cravings for comfort food. Don’t you agree that chili just makes you feel warm and toasty, like you could sit by a fire and just chill with good friends?

So one thing I’ve learned over the years (almost 22 years of entertaining) is that you can make even last minute entertaining fun and creative, warm and comfy.

It doesn’t have to be fancy.

People don’t really expect fancy.

Think about what you’re serving, and what condiments would make it better, and then present it in a fun and festive way!

In my case, I pulled out 6 ramekins to put the hot chili in.

Sliced up lime. Chopped cilantro. Added a bowl of sour cream. Crunched up some organic chips in my pantry.

Put the holiday napkins and spoons in a container. And we were ready to eat!

Weeknights can be so simple, and if your guests can bring the wine and dessert – you’re set.

For this night I served the entire meal, but it was light and easy.

Not perfect. But really good.

Oh, and by the way, with “last-minute” entertaining, you really don’t have time to worry about the state of your home … :)

Bush's Beans Easy Chicken Chili Recipe

Yield: 8 servings

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Quick and easy chili; best made with mango peach salsa.

Ingredients:

  • 1 roasted chicken, pulled and cut into small pieces
  • 2 T. oil
  • 1 medium onion, chopped
  • 1 red or yellow pepper, chopped
  • 3-4 cloves garlic, pressed
  • 2 (15 oz.) cans Mexican-style stewed tomatoes, undrained
  • 2 (15 oz.) cans Bush's Cannellini Beans, drained
  • 2 (15 oz.) cans Bush's Kidney Beans, drained
  • 2 (15 oz.) cans Bush's Black Beans, drained
  • 2-3 cups salsa
  • 2 tsp. ground cumin
  • 2 tsp. chili powder
  • 1 tsp. salt

Directions:

  1. Sauté onion, pepper, and garlic in oil.
  2. Add the chicken, beans, salsa, and spices. Mix together.
  3. Simmer or 20 minutes, or cook on LO in slow cooker 4-6 hours.

    The chili looks delicious! Besides my children’s friends deciding to stay for dinner, I don’t think I have ever had unexpected guests to feed. I think I would probably freak out a little trying to figure out what to feed them, but it would be fun, and you are right…you wouldn’t have to stress over the state of your home- too late! ;-)

    I actually had last minute guest yday for dinner. I came back from home and my lovely hubby announed – we have friend coming over for dinner in an hour. :) We managed easily to pull out 3-course menu. Quick check in the fridge… starter – fake blinis with smoked salmon and creme fraiche, main – turkey breast with tarraagon sauce and risotto milanese, dessert – creme brulee. All done in just over an hour :) That’s why I love your blog – entertaining is not scary! You just have to use your imagination! Sending warm hugs!!!

    I love last minute guests. I know that sounds crazy, but those usually are the most fun. They always seems to meld in with meal preparation and the atmosphere is always more relaxed. Thanks so much for including my weeknight black bean chili. That has saved me many nights! xoxo

    Yum! that looks yummy and what a great idea! I think I might tend to panic if it was close to payday when the food is pretty slim in the kitchen…lol…not always much to work with about that point.
