Friends, if you love tacos, then you’ll love this tostada recipe, Beef Bean Tostadas with Strawberry Beet Salsa. A tostada is basically an open-faced taco, and our family loves tacos (or any Mexican dish) pretty much twice a week.

This recipe is made with my favorite beets (yum) and strawberries, made into a delicious salsa. You can’t go wrong with Strawberry Beet Salsa! We came up with a few years ago, when we had a garden and grew our own berries and beets.

I so love this combination for spring!

Being a connector

When it comes to hospitality and so many gatherings in our home, I’m always thinking about who should meet who.

I’ve heard people say that I’m a good connector. At first, I doubted myself. But then, as I heard it said over and over, I started to believe that it may be true. Taking a compliment from others can be hard, but we have to learn to embrace words from others (a bit of wisdom from a 50+year-old). Once I learned to not be embarrassed over this “compliment,” I started sharing my passion with others, believing that I was a connector, and then acting on it.

We love bringing people together. It’s so important to listen and think of the resources around us, or people that you know, who could actually help another person.

Connecting people together by sharing a name, introducing them, can help with healing or even a certain mission in their life. Have you ever thought about that?

Hospitality really does go further than a gourmet meal and a pretty table setting. To me those are fun, and I love to throw a last-minute table together and make it special for guests. But the heart of the matter of hospitality for me is that connection—sometimes a soul connection, a connection with words, a physical connection–is the icing on the cake.

Friends, be willing to be that conduit for others. Yes, it can be a challenge, but is ultimately rewarding for everyone! Possibly this is a new way of thinking … :)

Beef Bean Tostadas with Strawberry Beet Salsa

Ingredients
 

  • 1 medium onion, about 1 cup, chopped, divided
  • 2 Tbsp. olive oil
  • 1 1/2 pound lean ground beef
  • 1 tsp. cumin
  • Salt and pepper or taco seasoning
  • 1 can, 15 oz Bush’s Black Beans
  • 1 1/2 cups cooked beets, diced (I buy Love Beets, organic, cooked)
  • 1 1/2 cups strawberries, diced
  • 2 Tbsp. chives, finely chopped
  • 1/4 cup cilantro, finely chopped
  • 2 tsp. honey
  • 2 tsp. lime juice
  • 1 tsp. Cholula Lime Hot Sauce, optional
  • 1 large avocado, mashed
  • 1/4 cup sour cream
  • 1 lime, squeezed
  • 8 prepared tostada shells

Instructions
 

  • Sautee 3/4 of the onions in olive oil for about 5 minutes. Add the ground beef, and cook another 5-7 minutes, draining off any fat after cooked. Add the cumin, salt and pepper, or season to taste.
  • Add a can of drained black beans.
  • To make the salsa, mix the diced beets, strawberries, chives, cilantro, honey and lime juice together. Hot sauce optional! Lightly salt; set aside.
  • To make the guacamole, mix the mashed avocado, sour cream, 1/4 cup onions, and lime. Season to taste.
  • Layer on top of the prepared tostada shell a thick layer of guacamole. Spoon the beef and bean mixture on top, ending with the salsa.
  • Serve.
