Imperfect Blueberry Angel-Food Trifle

I love this quote of Mother Teresa’s. It sounds so lovely and I really wish the last line would be a reality all of the time, but I have to admit that for me, it’s not. But it’s a good goal to have and to strive for.
I love how she talks about our houses. I know that as a matter of fact my house is not the same as her house was. But she still encourages us to love others … starting in our homes.
One thing I did this last week was to try a new trifle recipe.
I really appreciate the simplicity of this dessert, and that the ingredients are low-fat. The secret is to use a really good Greek yogurt, because the flavor is actually richer.
I found my $2 yard sale trifle bowl. (I’m getting excited for yard sale season this year!)
I also call this the “imperfect dessert” because it doesn’t matter if the layers are not perfectly put together. It’s quick to make, very few ingredients, and very tasty and healthy for your guests.
My family loved it.

Recipe: Blueberry Angel-Food Trifle {ReluctantEntertainer.com}
Summary: This dessert can be made low-fat by using low-fat or fat-free Greek yogurt.
Ingredients
- 1 pound frozen blueberries
- 1/2 cup sugar
- 1 store-bought angel-food cake
- 2 cups fat-free or low-fat good quality Greek yogurt
Instructions
- Place the berries and sugar in a saucepan and heat gently until the sugar has dissolved and the berries are soft, for about 8 minutes. Let the berry mixture cool.
- Tear large chunks (about 3 x 3 inches) from the angel-food cake and line the bottom of a glass bowl.
- Cover with a layer of yogurt and a layer of berries in syrup. Repeat the process, ending with spoonfuls of yogurt and berries on top!
- Refrigerate or serve right away.

Look how rich in color those blueberries look! YUMMY! I made a similar dessert awhile back. I purchased little plastic parfait cups I layered honey flavored greek yogurt, sliced strawberries, bananas, slivered fresh basil, then drizzle with melted chocolate and sprinkle with coconut if desired…YUM! The basil adds a POP that I would have never imagined!

Well, Sandy, you can’t get simpler than that. It looks so rich and luscious, but I’m sure the calorie count was very low with the Greek yogurt and angel food cake. What a dieter’s delight!
