Roasted Strawberry Chicken Sandwich
Roasted Strawberry Chicken Sandwich is a warm, cheesy sandwich with fresh strawberries, Mozzarella cheese; drizzled with balsamic glaze!
One of my favorite lunches is this Roasted Strawberry Chicken Sandwich with mozzarella cheese! Try this delightful chicken salad on a baguette or a croissant or your favorite bread.

I had a few friends over for lunch last week and I made a delicious, Roasted Strawberry Chicken Sandwich, which in reality, is one of my favorite sandwiches.
Let me just say, the look on their faces when they took a bite of this sandwich was priceless.
What do you need to make a Roasted Strawberry Chicken Sandwich?
Gather these simple ingredients for the best chicken sandwich!
- Baguette bread
- Butter
- Garlic
- Mozzarella cheese
- Balsamic glaze
- Rotisserie chicken
- Strawberries
- Salt and pepper
- Fresh basil
How do you make a Roasted Strawberry Chicken Sandwich?
Today’s sandwich recipe so easy to make!
- Take one baguette and cut in half, and then again lengthwise. You’ll have 4 long pieces of bread.
- Combine butter and garlic and spread evenly over the bread.
- Layer pieces of rotisserie chicken on top of the garlic butter, topping with thick slices of fresh mozzarella cheese.
- Bake in the oven.
- Top with strawberries, fresh chopped basil, and season with salt and pepper to taste.
- Drizzle with Balsamic Glaze (I use Delallo brand).
Tips and substitutions:
- Garlic bread with chicken, strawberries, fresh mozzarella cheese, basil, and a drizzle of balsamic! The best “sandwich” ever!
- Replace the strawberries with tomatoes.
- Use Brie cheese instead of mozzarella.
- Use mango, cilantro, and Jack cheese for a Chicken Mango Sandwich.
- Leave off the chicken for a vegetarian version of a Chessy Roasted Strawberry Baguette Sandwich.
- Make your own balsamic glaze, or buy a good quality bottle (we love Delallo’s brand, nice and thick and rich!)
- Buy 2 bottle of Delall’s Balsamic Glaze – well worth the money!
- Substitute the chicken for steak – try this Steak Caprese Sandwich with tomatoes.
But more about friendships. Some may be reluctant to invite friends over for lunch. For me, sitting down and enjoying a meal with a friend is nourishment and pleasurable. It fills me up inside–whether eating in a home or even out on a lunch date–to sit and listen to my friends talk about their lives. I don’t feel like my house has to be perfect, and I really just focus on an easy meal, and a place where we can sit and talk.

Roasted Strawberry Chicken Sandwich
Ingredients
- 1 loaf baguette bread, cut in half, and then lengthwise cut in half
- 4 Tbsp butter
- 3 cloves garlic, minced
- 12 oz. fresh mozzarella cheese, sliced
- ½ cup balsamic glaze, (we use Delallo brand)
- 2 cups rotisserie chicken, chopped or shredded
- 2 cups strawberries, sliced
- Salt and freshly ground black pepper, to taste
- ½ cup chopped fresh basil
Instructions
- Preheat oven to 400 degrees F. Place 4 pieces of the baguette on a large baking sheet with the cut side up.
- In a small bowl, combine butter and garlic and spread evenly on bread halves. Place the chopped chicken, and then mozzarella cheese slices on top of the bread. Bake the bread for 15 minutes or until the cheese is melted.
- 3. At the same time, slice the strawberries and lightly drizzle with balsamic glaze (saving most of the glaze for the final drizzle), putting in the oven and roasting for 3-5 minutes. (Optional, or you can serve the strawberries fresh without roasting.)
- Remove the bread and strawberries from oven. Top the bread with strawberry slices. Season with salt and pepper, to taste. Add the fresh basil and drizzle with balsamic glaze.
I ma planning to make this tomorrow for some girlfriends. I just want to double check that the cheese is the fresh mozzarella–the soft cheese rather than the harder mozzarella like on ewould use on a pizza. PLease advise.
