Almond Butter Pretzel Popcorn Snack

Almond Butter Pretzel Popcorn Snack
There are so many popcorn recipes and combinations to try these days, but so many are also a bit too sweet for my taste. This recipe is as good as it looks, on the lighter side with an almond butter and honey glaze, mixed with Blue Diamond’s Toasted Coconut Almonds.
Ingredients for Pretzel Popcorn Snack
- Plain popcorn
- Small pretzels
- Honey
- Granulated sugar
- Creamy almond butter
- Vanilla extract
- Almond extract
- Dried cranberries
- White chocolate chips
- Blue Diamond Toasted Coconut Almonds
Almond Butter Popcorn
Start with some fluffy white popcorn–lightly salted is fine. You can use air-popped or a light microwave popcorn, but stay away from the heavily buttered varieties.

Oh, and add a few other ingredients too, like cranberries, white chocolate, and our family favorite Blue Diamond Toasted Coconut Almonds!
Crunchy and fun to serve in little cups for Game Day. That way your guests don’t have to reach into the bowl and get their hands all sticky!
Not too sweet
I’ll be making this again for weekend parties that we’ve been invited to, and can’t wait to customize it with the final team colors – possibly with some M&M’s or other snacks that are colorful.
It will truly be in the spirit of fair play. :)
But I’ll still be drizzling the popcorn with that almond butter and honey mixture!
And, guess what? It’s not that sweet like the usual caramel popcorn.

Almond Butter Pretzel Popcorn
Ingredients
- 8 cups plain popcorn, about 1/3 cup popcorn kernels, lightly salted
- 2 cups small pretzels
- 1/2 cup honey
- 1/2 cup granulated sugar
- 1/2 cup creamy almond butter
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 cup dried cranberries
- 1 cup white chocolate chips
- 1 container Blue Diamond Toasted Coconut Almonds
Instructions
- Place the popped popcorn in a large bowl. Add the pretzels and set aside.
- Mix the honey and sugar in a small saucepan and bring to a boil. Remove from the heat and add the almond butter. Quickly stir until all the almond butter is melted, stir in the vanilla and almond extracts.
- Immediately pour the almond butter mixture over the popcorn and pretzels. Add in the cranberries and white chocolate chips and almonds. Gently stir until well-coated (you may want to use your hands).
- Don’t over-mix.
- Place the popcorn in snack cups; serve!
