Pancetta Arugula Salad

- Pancetta
- Arugula
- Parsley leaves
- Lemon
- Goat cheese
- Red onion
- Kosher salt
- Freshly ground black pepper
How to make Pancetta Arugula Salad
- Heat a medium sauce pan. Add pancetta and cook until edges are golden brown and fat has pooled from the bottom.
- While pancetta cooks, zest lemon and then juice it.
- In large salad bowl, place arugula and parsley. Using a slotted spoon, place pancetta on top, along with crumbled goat cheese, and red onion.
- Place excess fat from pan in small bowl, and whisk together with lemon juice, a pinch of salt, and a dash of pepper.
- Pour over salad, and garnish with a few pinches of lemon zest.
- Serve immediately. of course goat cheese makes everything good!
Tips and substitutions:
- Of course you can replace the arugula with other greens, like butter leaf lettuce or spinach!
- Don’t like goat cheese? Use feta cheese.
- Can’t find pancetta? Bacon is an easy replacement.
- Always optional to serve your favorite salad dressing with this recipe, if you want to serve it on the side for those who like more dressing.
