- Shelled pistachios
- Lemon curd
- Honey, optional
- Fresh thyme or rosemary
- Sweetened Dried Lemon Slices (I buy at Trader Joe’s)
- Thinly sliced baguette, for serving, or favorite crackers
How do you make Baked Lemon Brie?

- Preheat the oven to 375 degrees. Place brie round on an ovenproof serving dish. I like to lay parchment paper down on a baking sheet.
- Slice the top of the brie round off, cutting inward to make a bowl. Remove the “lid.”
- Fill the bowl with the lemon curd and 1/2 cup of pistachios. Sprinkle with 1/2 the finely chopped fresh thyme or rosemary. Place the lid on top, pushing down. (It’s okay if a little bit falls to the side). Drizzle with honey (optional). Sprinkle with the remaining pistachios and chopped thyme.
- Bake until the cheese inside the rind is melted and bubbly.
- Serve hot with your favorite crackers or baguette bread slices.
This week we had a couple over for a glass of wine. I had all the ingredients in the fridge and cupboard to make this recipe today, Baked Brie recipe. Don’t you love it when that happens?
Tips and substitutions:
- Swap out the lemon curd for your favorite flavor of curd. You may want to try our Mango Orange Curd or Rhubarb Curd.
- You can substitute the pistachios for chopped (toasted) walnuts, pecans, macadamias, or cashews.
- If you don’t want to use curd, you can use any jam.
- Use basil in place of thyme.
- If you don’t like the dried lemon slices, you can omit from the recipe.
- Leftovers are great in a lunch-wrap with chicken and brie.
- Serve with sturdy crackers (firm), or slices of baguette bread.

I’m not sure I get where the lemon slices are used in this recipe. It says they can be omitted, but from what part of the recipe?
It’s more of a garnish – the Trader Joe’s lemon slices.
Can i use candied orange slices???. Our trader Joe’s said they were not in season. And didnt carry them.
