Baked Lemon Pistachio Brie Recipe

All you need are these ingredients:

  • Round of brie
  • Shelled pistachios
  • Lemon curd
  • Honey, optional
  • Fresh thyme or rosemary
  • Sweetened Dried Lemon Slices (I buy at Trader Joe’s)
  • Thinly sliced baguette, for serving, or favorite crackers

Years later, I was wracking my brain to remember who taught me more “gourmet” aspects of cooking. It was hard to come up with the names, because food was segregated into comfort, basic, and on the tip of gourmet. As a young woman in my 20’s I’d have to say it was my friends, Roger and Faye. Roger was a doctor that I worked for for many years (a nephrologist), and Faye, his wife, a kindergarten teacher.

Slow cooking

Both of them loved to be in the kitchen, cooking food “slow” and adding lots of herbs – and love! Roger loved the science of cooking meat, and Faye loved to tell the story. Both friends are to this day still very precious to me.

Start with brie on parchment paper. Take a knife and cut off the top of the brie.

How to prepare lemon brie

  1. Fill with lemon curd, pistachios, and fresh rosemary.
  2. I usually drizzle a tiny bit of honey on top, but you can go without.
  3. Bake and serve with your favorite crackers!

Baked Lemon Pistachio Brie Recipe

  • 1 8-12 oz round of brie
  • ½ cup shelled pistachios
  • cup lemon curd
  • 2 Tbsp. honey, optional
  • Fresh thyme or rosemary, finely chopped
  • Sweetened Dried Lemon Slices, I buy at Trader Joe's
  • Thinly sliced baguette, for serving, or favorite crackers (we love Lesley Stowe Raincoast Crisps
  • Cranberry and Hazelnut Crackers)


  • Preheat the oven to 375 degrees. Place brie round on an ovenproof serving dish. I like to lay parchment paper down on a baking sheet.
  • Slice the top of the brie round off, cutting inward to make a bowl. Remove the “lid.”
  • Fill the bowl with the lemon curd and 1/2 cup of pistachios. Sprinkle with 1/2 the finely chopped fresh thyme or rosemary. Place the lid on top, pushing down. (It’s okay if a little bit falls to the side). Drizzle with honey (optional). Sprinkle with the remaining pistachios and chopped thyme.
  • Bake for 8-10 minutes, or until the cheese inside the rind is melted and bubbly.
  • Serve hot with your favorite crackers or baguette bread slices.
