Well, winter came late this year. For several days, we got a ton of snow here in central Oregon.
And then the sun came out!
Time to get outside, when the pups get anxious inside.

The crunchiness with each step, the clean smell in the air, cold cheeks, brisk walks.
When I remember snow as a kid, I think of taking the church bus up to the mountains for sledding and fun. I never had warm enough boots (I think I wore rain boots), and used flimsy gloves (the knitted kind). Coming back to the bus freezing, we always had good food, like chili, and always hot chocolate.
Then some kind of cupcakes or cookies.
Those were the golden days as a kid. So much fun. We didn’t get much snow, so when we did, it was glorious!
Later in high school, I took up skiing and never looked back …

BEST Banana Bread Cupcakes with Chocolate Ganache
Ingredients
- 1 stick butter, 1/2 cup, softened
- 1 cup sugar
- 2 eggs, beaten
- 1 1/2 cups flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 cup mashed bananas, about 3
- 1/2 cup sour cream
- 1 tsp. vanilla
- 3/4 cup pecans, chopped (optional)
- 3/4 cup chocolate chips, good quality
GANACHE:
- 2/3 cup whipping cream
- 1 cup 6 oz semisweet chocolate chips
Instructions
- Preheat oven to 350 degrees. Prepare pans for 24 cupcakes (either grease, or add muffin papers).
- In a large bowl, cream the butter with sugar until light and fluffy. Add the eggs and mix well.
- Whisk together the flour, baking soda, and salt; combine with the butter mixture.
- Add the sour cream, bananas, vanilla and pecans; stir well. Gently stir in the chips.
- Scoop into prepared cupcake papers and bake for 20 minutes.
- Cool for 10 minutes.
- In 1-quart saucepan, heat whipping cream over low heat, just to boiling. Remove from heat; stir in chocolate chips until melted. Let stand about 15 minutes.
- Spoon 1 tsp. chocolate mixture onto each cupcake. Garnish with sprinkles!
Really really rich and delicious! Got a lot of wows and even some cuss words, like “holy bleep this is good” from my guy and his friend. I dipped my cakes in the ganache!
