But first, let’s talk hospitality mentors today.

I’ve written about it for years on my blog, and in my book (2010), but it’s good to bring back an important topic.

Hospitality mentors

Of course my first mentor in life was my mom, as she lived and breathed hospitality. Actually, my dad was there right alongside her. But through the years, I can think of handfuls of women I’ve looked up to for their hospitality skills.

These ladies were not about impressing, but actually living out this “big” word … hospitality.

What’s a hospitality mentor?

A mentor is someone who allows you to exercise the potential inside of you, and teaches you the good. I say “teaches” because being a mentor is not just talking about how to do something, it’s taking action.

So what better way than to be in the kitchen with a woman that you highly respect and love to be around!

My cousin, Terri, was an important person in my life. She was one of those who stirred the pasta with one hand, with the other hand holding a chubby baby on the hip. I can’t tell you how many meals I ate at my cousin’s house in my early 20s.

Terri fed me. Terri led me. She spoke truth, as she not only demonstrated how to make certain recipes (like these Old Fashioned Cinnamon Rolls recipe), but inspired me to be a seeker in life, to learn and grow in God.

Servings: 6

  • 1 pound whole wheat pasta we used Ragatorni
  • 2 tablespoons extra-virgin olive oil
  • 6 ounces fresh mozzarella cut into cubes
  • 6 ounces fontina grated (about 1 cup)
  • 3/4 cup fresh ricotta
  • 1 cup Romano cheese grated (or shaved)
  • 1 14 oz canned crushed tomatoes, do not drain
  • 1 6 oz jar sliced truffled mushrooms (we buy DeLallo)
  • 1 cup whole milk
  • 1 tablespoon finely chopped rosemary
  • Kosher salt and freshly ground black pepper
  • 1 green onion thinly sliced

  • Bring a pot of salted water to a boil (we usually add about 1/4 cup of salt). Add the pasta and cook until very al dente, 10 minutes. Drain the pasta, toss it with olive oil and set aside.
  • Preheat the oven to 450°. In a large mixing bowl, combine the four cheeses. Remove one half of the cheese and set aside.
  • Pour the tomatoes, mushrooms, and milk into the mixing bowl with half the cheese. Season the mixture with salt and pepper and stir to combine. Add the cooked pasta and rosemary and toss.
  • Pour the pasta into a shallow 12-inch skillet. Sprinkle with the remaining ½ of the cheese and bake until the top is bubbling and golden brown, 10-15 minutes.
  • Top with green onions and serve.

  1. Preheat oven to 500 degrees?
    Bake 15-16 minutes?
Would this not BURN the pasta instead of baking it.
Should it be covered and baked @ 350  – 375 degrees?

  2. The directions are showing up for me just fine. I can’t wait to try it. I love how you talk about “hospitality mentors”. I have never thought about it before, but I do have some that I try to imitate. You are my mentor too! Keep up the great work!
