Broccoli Chicken Rice Soup
Last week on my Insta story, I shared the process of making this Broccoli Chicken Rice Soup. So easy.
You start with a rotisserie chicken like I did, or any chicken will work for this recipe. Even canned chicken!
How to cook the chicken
Best secret? Keep the skin on (with rotisserie chicken) for the best flavor!
- Place a rotisserie chicken in a large pot of water.
- Add 1 onion and celery, salt and pepper and garlic powder.
- Boil, and then simmer and cook for 30 minutes.
Broccoli cheese soup takes me back to my childhood. This is a healthier version, but with the option to add handfuls of cheese on top.
Soup was about the only way I would voluntarily eat broccoli as a kid, unless it was overcooked in a chicken divan recipe. HA!

Refrigerate or freeze if there are any leftovers!
Ingredients for this soup:
- Rotisserie chicken
- Celery, carrots, and onion
- Salt and pepper, garlic powder, thyme
- Chicken stock
- Cooked rice (we used brown)
- Broccoli florets
- Shallots
- Olive oil
- Cheese for topping (we used Cabot brand; have you tried their Cracked Peppercorn Cheddar Cheese?)

Broccoli Chicken Rice Soup
Ingredients
- 1 whole rotisserie chicken
- 3 stalks celery
- 2 carrots
- 1 large onion
- Salt and pepper
- 1 Tbsp garlic powder
- 1 quart chicken stock
- 6 cups cooked rice
- 3-4 carrots, sliced
- 4 cups chopped broccoli
- 2 large shallots, peeled and sliced
- 2 Tbsp olive oil
- 1 tsp dried thyme
Instructions
- Place a rotisserie chicken in a large pot of water. Add 1 onion and celery, salt and pepper and garlic powder. Boil, and then simmer and cook for 30 minutes.
- Cook brown rice according to directions.
- Saute sliced shallots in olive oil for 2-3 minutes, until soft.
- Keep the broth! Remove the chicken from the broth; when cool enough, debone the chicken. Remove the onions and celery; cut into small places and place back in the broth. Cut deboned chicken into small pieces and place back into the broth. Add 1 quart of chicken broth.
- Add to the chicken broth mixture the cooked rice, shallots, thyme, and salt and pepper to taste. Cook on medium heat for about 10 minutes.
- Lastly, with a mandolin, thinly slice the remaining 3-4 large carrots. Add the carrots and the broccoli to the pot. Cover with a lid and simmer for additional 15 minutes.
- Serve with shredded cheese!
