It’s the people that matter

It’s the people in our lives that matter, and when our eldest recently thanked my husband and me for showing him the gift of hospitality, paving the way, he was relating it to a good investment in life.

Butternut Squash Granola Parfaits

Delicious made with this homemade grain-free granola recipe!

Ingredients
 

  • 3 cups Greek Yogurt
  • 3/4 cup Grain Free Granola, or your favorite granola
  • 2 c. butternut squash
  • 1 tsp. cinnamon
  • 1/4 tsp. ground ginger
  • 1/4 tsp. of nutmeg
  • 2 Tbsp. maple syrup
  • Pinch of salt
  •  Honey for drizzling
  • 1 Tbsp. almond butter
  •  

Instructions
 

  • Peel, core, and cube the butternut squash. Toss together with cinnamon, ground ginger, nutmeg, salt, and melted coconut oil.
  • Bake in oven at 400 for 25 minutes. Remove from oven, allow to cool completely and set aside.
  • In small glass cups or glasses, evenly divide and layer yogurt, squash, granola, and a small drizzle of honey. Layer for about three layers. Top with a tbsp. of almond butter, a sprinkle of granola, and a few cubes of squash.
  • Right before serving, drizzle with honey; serve!
