We’re starting off the New Year eating more salads and enjoying smoothies every morning. There’s something about the beginning of a month or year that gives us a reset, and helps set new goals.

All you need for this board are these ingredients:

  • Cooked farro
  • Cooked chicken breasts (or you can use shredded chicken or rotisserie chicken)
  • Soft boiled eggs
  • Mini bell peppers
  • Avocado
  • Strawberries
  • Mixed greens
  • Sasoned marcona almonds
  • Crumbled feta or goat cheese
  • English cucumber
  • Honey mustard dressing or Cilantro Lime Vinaigrette

Ingredients
 

  • 2 cups farro, cooked
  • 2 chicken breasts, cooked, sliced
  • 6 soft boiled eggs, cut in half
  • 6 mini peppers, thinly sliced
  • 1 avocado, sliced
  • 12 strawberries
  • 4 cup mixed greens
  • 3/4 cup marcona almonds
  • 3/4 cup crumbled feta or goat cheese
  • 1/2 English cucumber, sliced
  • 1/3 cup honey mustard dressing

Instructions
 

  • On a large prepared board, fill 4 large bowsl with chicken strips, cooked farro, soft-cooked eggs, and peppers, and place on the board. In 2 smaller bowls, will with almonds (you can chop them if you prefer), and cheese. In a very small bowl, add the dressing.
  • Around the bowls, fan the avocado slices and cucumbers. Add the strawberries, and fill in any other open areas with fresh greens.
  • Everyone makes their own salad or bowl; add salad dressing and ENJOY!
