I was shopping with my daughter at Trader Joe’s the other night (the best time to shop at Trader Joe’s is in the evening), and I stumbled upon these adorable mini chicken tacos in the freezer section. I was a little unsure about trying them, but they are soooo good! So we put together a sweet Chicken Taco Dipping Board for Valentine’s Day!

When I think about my daughter, my heart flutters a bit. I’m so fond of her, and so thankful for her friendship and how much I learn from her! Yes, she’s 25 this year, but she’s wise beyond her years.

Friendships in general are hard for many. And new friendships can be hard to come by, I hear more and more. And this season in life we’re all in sure doesn’t help, being a little isolated.

Invite a friend

People feel that everyone is too busy, too locked down, or it’s just not safe to open up and invest. That is sad. Of course we need to walk carefully and wisely. We should all learn when to speak, or speak up. And we should also know how to listen.
Listening is a great gift to give for Valentine’s Day!

Invite a neighbor, couple, or someone who’s been on your heart. Make a simple meal, have your guests bring a salad and a bottle of wine. Sit outside (if you can) and enjoy a few bites together!

How to make a mini taco dipping board

  1. Take a 20-inch BIG BOARD. On a large board, set down a plate in the center to hold hot tacos. We found a heart-shaped plate at Target! So cute!
  2. Preheat oven to 400 degrees. Bake the tacos according to package directions (about 6-8 minutes).
  3. Fill 5 small bowls with the dips and sauces, and place on the outer inside edge of the board.
  4. Place the tacos on the heart plate and serve hot!
  5. Fill in open spaces with chips, and garnish with jalapeños (optional).

This board is a sweet snack. Or, make it a meal and serve a salad with it.

Dip into your favorite sauce and enjoy!
