You do a little cooking on the stove, a little stirring, then pouring into the beautiful white ramekins.

  • Whole milk and unflavored gelatin
  • White sugar (not much) and Greek yogurt
  • Vanilla and almond extract
  • Dark chocolate (use a good quality, like Guittard)
  • Fresh strawberries and whipped cream and mint for garnish

Love in Paris

Love makes me think of a few months ago, when Paul and I were in Paris. The charm, walking the streets, holding hands, a quiet hush as we viewed Notre Dame, and walking through the legendary Shakespeare and Company!

Standing on the Pont Neuf (the oldest standing bridge across the river Seine) and taking it all in. We missed the golden hour, but we were in beautiful places at night.

What a blessing that we could visit this city that I’ve ready about my entire life. There is something about visiting a city for the first time, isn’t there?

Chocolate Greek Yogurt Panna Cotta

  • In a small bowl, combine 3 Tbsp of milk with the gelatin. Don’t mix, and allow to sit for 10 minutes.
  • Heat remaining 1 1/4 cup milk and 4 Tbsp of sugar in small saucepan over medium-low heat, stirring until the crystals dissolve completely. Next, incorporate the gelatin mixture and stir. Finally, add in the chopped chocolate, and gently whisk until it melts and the milk is smooth—do not bring to a boil.
  • Turn off heat, and and allow milk to cool slightly for 7-9 minutes, then whisk in yogurt, vanilla, and almond extract until smooth.
  • Divide mixture equally into the ramekins. Cover with plastic and chill in the refrigerator until firm—8 hours or overnight.
  • Serve each ramekin with whipped cream, a sliced strawberry, and mint leaf!
