Keep your favorite ice cream on hand. And Trader Joe’s waffle butter crisp cookies.

Paul and I were on a walk this week, and talking about this type of rubber-meets-the-road, real-kind of hospitality. The kind where people come together, not agenda driven, but real-life driven.
In a sense, opening our homes is for other people. As a host, it’s not really about us.
We’re just the tools to make it happen, to connect people, and to allow miracles to occur.
We’ve seen miracles happen around our table. One story was so odd at the time, it later proved true , and then something we laughed about.
My husband is great about asking questions of guests, to get everyone involved in the conversation.
At one dinner party, he asked 2 questions that everyone had to answer, and little did he know these 2 questions were “off limits” for our friend’s date, whom she had brought to the party.
Simple questions like “what’s your middle name and how did you get it,” and “what is your college degree?”
I’m not kidding. He was livid that we asked these 2 questions, when my husband had NO clue they would be a sensitive subject for him. NO clue.
Miracles happen around food and drink
Later we realized once again, miracles happen around food and drink.
We ferreted out that this man would not be the right person for our friend to date, and our friend saw that as well.
It’s a simple story. But profound.
A lot can happen around the table. It’s getting to know people, where people show their true colors sometimes, where hearts are softened, and even where anger can explode.
Table experiences can bring wisdom and insight. Yes, almost 26 years worth of stories that my hubby and I could tell.

Chocolate Peanut Butter Ice Cream Sandwiches
Ingredients
- Favorite ice cream, such as Chocolate and Peanut Butter (We buy Tillamook)
- 1 box waffle butter crisp cookies, We buy at Trader Joe’s
Instructions
- Soften ice cream on the counter for about 10 minutes. Scoop about 1/4 cup in-between 2 wafers (cookies); press together.
- Wrap in plastic wrap and freeze.
- Pull from freezer and serve immediately!

I love this idea of simple ice cream sandwiches. I need to get to TJ’s more…ours is on the opposite side of town that I usually shop at and since I’m usually trying to just get there and back (when I do drive to town to shop) I never make it over there…lol.
