Hello, Friends! The season is finally here that brings people together for holiday gatherings and parties, and I am so excited! I truly love this time of year.

Some people say it’s really not Christmas unless you indulge in a little fruit cake, right? I grew up with my Grandma’s German Stollen version of fruitcake, which was a little on the dry side. I remember my mom and her sisters washing each bite down with a few sips of coffee! It just wasn’t Christmas without Grandma’s fruitcake!

This past week, Collin Street Bakery sent our family a DeLuxe® Fruitcake to enjoy, straight from their Collin Street Bakery in Texas.

We shared it with some friends, along with a festive holiday champagne drink!

At Collin Street Bakery, each fruitcake is the perfect balance of native Texan pecans (27%), and hand-picked golden sweet pineapple and lush papaya, from their own farms in Costa Rica. The ripe, red cherries are from Oregon (yay!) and Washington State. It’s also packed with pure clover honey, and plump golden raisins.

Add a sprig of rosemary and a couple of cranberries, and it’s absolutely delightful, with only 2 simple ingredients. You can use an inexpensive sparking wine or Prosecco is also a great choice. For a non-alcoholic drink use sparkling cider.

Cranberry Kir Royale

An inexpensive sparking wine or Prosecco is a great choice. For a non-alcoholic drink use sparkling cider.

Ingredients
 

  • 8 tablespoons frozen cranberry juice cocktail concentrate, thawed
  • 1 1/3 cups chilled champagne
  • Fresh cranberries, for garnish

Instructions
 

  • Pour 2 tablespoons cranberry concentrate into each of 4 chilled champagne or holiday glasses.
  • Add 1/3 cup champagne to each glass.
  • Add a few cranberries for garnish; serve!
