I always wanted to be a mother. I loved carrying my first baby doll around–changing diapers, burping, strolling, nursing, kissing, loving my baby. When I became a mother, it’s hard to even describe the love I had for my 3 babies. But there’s one thing more. I realized how much more I loved and respected my own mother, and how she sacrificed so much for us 3 girls.
Motherhood is nothing to take lightly. (That’s me above, in 1966.) It’s hard work. My mom left this world when my 3 kids were very small, but I’ve been blessed by my dad’s wife, Ginny, my sisters, and so many amazing women in my life! I truly feel blessed when Mother’s Day rolls around! Love Shauna’s reminder, how motherhood is sacred work!

Growing up in Oregon, one of my best memories with my mom was picking berries. In the summer, our garden produced every vegetable known to man, and mom knew all the secret orchards to buy fruit. Cherries were a favorite.
Cherry pies, tarts, hand pies, Cherry Crunch, delicious on ice cream, Chocolate Cherry Cake, other desserts, and so good in savory dishes, and breakfast dishes.

Today I’m sharing one of my favorite recipes, Dark Sweet Cherries Brie-Stuffed Chicken, made with a can of Oregon Specialty Fruit, Dark Sweet Cherries.
Prepare the chicken breasts, slice them open and stuff with brie, basil, and Dark Sweet Cherries. YUM!

Dark Sweet Cherries Brie-Stuffed Chicken
Ingredients
- 5 Chicken Breasts
- 1 can Oregon Dark Sweet Cherries, drained
- 1 small round of Brie cheese
- 3-4 tsp. salt
- 2 tsp. pepper
- 1/2 c. chopped fresh basil
- Balsamic Glaze
Instructions
- Preheat oven to 400 degrees.
- Drain cherries and set aside; slice brie into long, 1/2 inch strips. Coarsely chop basil.
- Tenderize chicken breasts. (With a tenderizer or between 2 pieces of plastic wrap with a can or bottle:) Place all five breasts on a greased or parchment-lined pan. Salt and pepper each side heavily with salt and pepper. Make a slit in the center of the breast, lenghwise, making sure to not cut all the way through.
- Place one slice of brie in each chicken breast, along with 6-10 cherries (depending on the size of the breast), and fresh basil. Leave 2 Tbsp. basil for garnishing on top.
- Sprinkle breasts with basil. Bake chicken for 30-35 minutes. (If chicken is really thick, you may need to bake it 10 minutes longer).
- Drizzle with balsamic glaze; serve!
OMG, I’m totally making this! Brie is my favorite, especially when combined with a fruit in a savory dish! Specific? Maybe. But this is spot on!
