But first, with these beautiful, cool mornings, I’m loving my daily walks to the river, and then the incredible sunsets at night.

Reality is that not all days end with beautiful sunsets. Life is messy and hard, full of challenges, decisions, a lot of “no’s” and and mistakes, and things that blindside us.

Food brings us together. It brings people together, and they might be people we do not know very well.

We come together at night, maybe with our family, maybe with guests around the table, and that gathering, paired with good, healthy food, is sacred and always sufficient.

Bring a meal to others

Or, maybe we spend the afternoon preparing a meal to share, and we take it to another family.

My friend Kristy and I just drove out and dropped off a meal for a family who just had their third baby. Mama and Daddy were both exhausted, and the two boys were on their way home. I remember what that was like … two little ones running around with a newborn. Absolutely exhausting.

At the end of the day, we may be spent. But we push against any darkness, disappointments, and the harsh reality that life is hard. And we turn it for good.

Our fight is good. It’s worthwhile. We look for the blessings; we are grateful for what we have, and we are called to serve.

Not ourselves or our passions, but those around us, and to encourage with love.

For me, that love is through food.

Easy Peach Caprese Salad

My go-to summer salad that we have been enjoying is this Peach Caprese Salad Recipe.

It’s so easy, you can’t go wrong.

All you need is to make sure that your peaches are ripe. In my mind, there’s nothing so tasteless than an underripe peach. Bleah!

What I love about this salad is that the tomatoes are optional. It’s great either way.

If you don’t have balsamic glaze, then drizzle with olive oil and balsamic vinegar.

Always end with a sprinkle of salt and pepper.

This is a great salad to bring to a family, maybe with fresh taco ingredients, and this amazing berry crumble!

Ingredients
 

  • 3 peaches, cut into small chunks (peel first if desired)
  • 6 oz. fresh mozzarella balls
  • Fresh basil, torn into bite size pieces
  • Olive oil
  • Balsamic vinegar
  • Sea salt and fresh ground pepper
  • Cherry tomatoes, optional

Instructions
 

  • Arrange peaches and mozzarella balls on a platter. Add fresh chopped basil; drizzle with balsamic glaze (or olive oil and balsamic vinegar). Salt and pepper to taste.
