A holiday meal is a good way to spend time with the ones that we love, as well as those who might be alone during this time of year. Over the years, I stick with three holiday main dishes, because they truly the best–tried and true! :)

Friends, what are you cooking for your holiday meal? If you haven’t tried my Very Best Clam Chowder, then you’re missing out. So good, it’s been my #1 recipe on RE for quite a few years!

But wait … there are two more favorite recipes for you to try, great for company! Marinated Cornish Game Hens (I got this recipe years ago from my lovey friend, Jenny), and delicious Pepper Crusted Prime Rib recipe. Both recipes you prepare ahead, which makes hosting much easier!

Around the table

Gathering around an overflowing table brings a good feeling, and is one of the most anticipated moments of the holidays. At least for me growing up, and now as an adult, I still remember the times my parents added a giant piece of plywood to our dining table to extend it for more people.

A meal with family, friends, and neighbors provides that opportunity to slow down, come together, and hang out at the table–for hours!

It’s when we really get to enjoy one another.

Invite everyone to bring a side dish from their own family’s holiday tradition (just an idea), or just a recipe they love.

One thing I’ve noticed when delegating part of the meal is you want to keep the “restrictions” easy for people. At least during the holidays, make it light and fun.

Delelgate part of the meal

Delegation takes the stress off of the hostess (hand raised!) to have to prepare the entire meal.

For instance, for Best Clam Chowder, ask your guests to bring a dessert, hot bread, or a giant green salad. If a lot of people are coming, don’t forget the appetizers. If a ton of guests are coming, don’t forget to double or triple the recipe (it’s that good). :)

For the 2 main dishes, Pepper Crusted Prime Rib and Cornish Game Hens Recipe, ask your guests to bring a salad, bread, dessert, and you can make the side dishes.

Here are some great side dishes that pair well with prime rib and cornish game hens.
