We’ve had a few birthday celebrations the past couple of weeks, on our front deck. I just love summer birthdays!
Our sons turned 25 and 23, Paul and I are in our 50’s now, and then if we learn a dinner guest is having a birthday, we try to make it special for that person, too.
It’s all about the birthday dessert at the end of dinner, right? Our dear friend Leeah made Paul his favorite Chocolate Peanut Butter Cake. YUM!
Every day we have the choice to live with intention, to figure out how we can fill our cups, so we can give out more. We should be meeting new people, inviting people over from different communities, and doing whatever it takes to live authentic, truthful lives, loving lives.
I always tell my friends who say they are in a rut, to make a dinner invite!
Get out of whatever rut you’re in, get involved, travel, take a class, invite new people over for a meal.
Try something new, walk away from unhealthy relationships, and take a chance!
Greek Black Rice Caprese Salad Recipe
Barbecuing is easy. Ask your guests to bring a salad, cut open a watermelon. I’ve made this Greek Black Rice Salad many times, this time adding a few new ingredients, like cucumbers and olives. It’s truly Greek, and so delish.
Set out a festive, colorful appetizer!
Here’s one thing I love about birthdays. You can reflect on the past year, giving thanks for all that you learned, and ways you’ve grown. And then you lean into the new year, challenging yourself and praying about how to change, new things you want to try, and how to better love people.
Paul and I were talking about the different groups of friends that we’ve recently enjoyed in our home.
Life is about becoming, not just being.

Greek Black Rice Caprese Salad Recipe
Ingredients
- 4 cups cooked black rice, we use Forbidden Black Rice
- 1 tablespoon Dijon mustard
- 1/4 cup balsamic vinegar
- 1/2 cup extra virgin olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup grape tomatoes, cut in half
- 1 cup Kalamata olives, cut in half
- 1 cup fresh mozzarella cheese, cut in small cubes
- 1 cup cucumbers, diced
- 1 cup fresh basil, thinly sliced
Instructions
- Cook the black rice according to package directions; cool.
- For the vinaigrette, combine Dijon mustard, balsamic vinegar, extra virgin olive oil, salt and pepper in a small dish. Salt and pepper to taste.
- Toss the cooled rice with the vinaigrette, but reserve a little for the end.
- Add the tomatoes, olives, cucumbers and mozzarella cheese into the rice. Add chopped fresh basil.
- Drizzle with the remaining vinaigrette, and add salt and pepper. Serve cold or room temperature. Garnish with fresh basil leaves.
Not a fan of olives? Don’t worry about it. This is great without.
