30 Days, 30 Ways, 30 Rewards – Hungry Girl’s Greek Chicken Tacos

Recipe: Hungry Girl’s Greek Chicken Tacos {ReluctantEntertainer.com}


  • 3 ounces Tyson® Grilled & Ready® Fully Cooked Refrigerated Grilled Chicken Breast Strips
  • 1/4 cup shredded romaine lettuce
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons drained and chopped roasted red peppers (packed in water)
  • 1 tablespoon roughly chopped, pitted kalamata olives
  • 1 tablespoon light vinaigrette
  • 2 corn taco shells (flat-bottomed, if available)
  • 2 dashes dried oregano
  • 2 tablespoons crumbled, fat-free feta cheese


  1. In a medium bowl, mix lettuce, onion, red peppers, olives and vinaigrette.
  2. Divide Grilled & Ready® Grilled Chicken Breast Strips between taco shells, and sprinkle with oregano.
  3. Top with lettuce mixture, followed by feta cheese.
  4. Now chew!

  3. I have tried several Hungry Girl’s recipes, and the ones I have tried have been delicious. She is very creative at reducing the calories and fat in comfort foods. The tacos look delicious! I am definitely going to try this recipe! I am a very healthy eater, but I do indulge in my favorite comfort food or sweet treat every now and then. There are times when the super healthy versions of your favorite recipes just don’t cut it- you just want the real thing! :-)

  5. We gave the ” Hungry Girl to the Max” cookbook to our teen GD for Christmas. She’s interested in cooking and many of the recipes seem easy. (Not from scratch but easy for a beginner). She’s very athletic and doesn’t need to lose weight but likes knowing the protein, carbs etc in her food. All sorts of nutrition info is listed with each recipe.

    This recipe looks good.
