Late summer zucchini appetizer
Before the smoke consumed us here in our little community in central OR, we were able to grill every day. This simple recipe today is one of my favorite summer appetizers. Or, I should say late-summer appetizers. The tomatoes and zucchini are still plentiful in the stores and stands alongside the road. We love to stop and support these local farms!
Ingredients for Zucchini Tomato Toasts:
- Baguette (we try to buy local from Sparrow Bakery)
- Zucchini
- Heirloom tomatoes
- Goat cheese
- Salt to season
- Basil
- Balsamic glaze (we use Delallo brand)
How to make Zucchini Tomato Toasts
- Toast baguette slices. While warm, smear each piece with goat cheese, and top with a slice of tomato. Set aside.
- Preheat grill to high heat.
- Slice zucchini diagonally. Toss the zucchini in olive oil or mayonnaise and salt and pepper. Place on the grill until grill marks appear, and the zucchini is tender. Remove from grill and allow to cool slightly before cutting the slices in half, lengthwise.
- Arrange the zucchini halves on top of the toasts.
Optional to use a toothpick if needed.
All about the balsamic drizzle
The balsamic drizzle on a toast is essential. Delallo now sells a “golden” balsamic (hard to see, it’s so light in color), and we love the light balsamic flavors it offers.
Garnish with fresh basil ribbons and serve!

Grilled Zucchini and Tomato Toasts
Ingredients
- 1 6 oz baguette cut diagonally into 12 pieces
- 1 large zucchini, cut into 12 slices
- 2 heirloom tomatoes, cut into 12 slices
- 3/4 c goat cheese, softened
- Salt to season
- Basil ribbons to garnish
- DeLallo Golden Balsamic Glaze
Instructions
- Cut and toast your baguette slices. Smear each piece with 1 Tbsp of goat cheese and top with a slice of tomato. Set aside.
- Preheat grill to high heat.
- Cut the zucchini into 12 diagonal slices. Toss the zucchini in 2 Tbsp of olive oil or mayonnaise. Salt and pepper, then place on the grill for 2-3 minutes per side, or until grill marks appear and the zucchini is tender. Remove from grill and allow to cool slightly before cutting the slices in half, lengthwise.
- Arrange the zucchini halves on top of the toasts—you can use a toothpick if needed. Drizzle with balsamic gaze and garnish with fresh basil ribbons!
